Hey Eric - sweet family Mother's Day video! Happy belated. BTW, Lyonnaise is "Lee-OWN-aze" as in the gastronomic city of Leon, France... essentially meaning "in a style of Lyon." Walleye (a perch relative) is available commercially from Canada, and generally just served in the upper midwest as far as I know. You are certainly correct about its Wisconsin association... it has a reputation as being the tastiest freshwater fish you can catch in Wisconsin. Some tribes in Wisconsin also sell it commercially, I believe, at stores on the reservation.
