I first need to start off by saying that Ethiopians love to eat, and their food is incredibly delicious. I knew I loved Ethiopian food before I ever visited the country, but when I was there, I was amazed at just how incredible the food was everywhere I ate. Here's another thing about Ethiopian food, there is plenty of vegetarian food available (migrationology...., and many people who follow the Ethiopian Orthodox faith normally fast (this means not eating any animals products on Wednesdays and Fridays, and during lent). That being said, meat is loved in Ethiopia, and one of the most famous and most loved dishes is minced raw beef known as kitfo (ክትፎ).
Now it can be a bold statement to say that a certain food is the most beloved dish of a country, but the only reason I say that is because just about every Ethiopian I know, friends in Kenya, USA, and from watching people in Ethiopia, I really think that it's one of the dishes that's most loved by Ethiopians. Kitfo (ክትፎ) is a special food, it's not something that's eaten on a daily basis, it's eaten more during celebrations.
Before going to Ethiopia, I had eaten kitfo (ክትፎ) on numerous occasions at restaurants, so it was a dish I knew I wanted to eat when I was in Addis Ababa. I decided to go to a restaurant known as Yohannes Kitfo - this is a kitfo house, in other words, you come to this restaurant to eat one dish only: kitfo. The restaurant is actually pretty nice, tucked back in the quiet neighborhood and in a nice peaceful place to dine. There are two different methods of kitfo (ክትፎ), the "leb leb" version is slightly cooked, and the other version is served completely raw. I decided to go completely raw in an effort to taste the truest taste of the beef, but the leb leb version might be a little bit of a safer option when it comes to bacteria. But that being said, they use only the freshest meat so that the beef is high quality and excellent to eat raw.
What exactly is Kitfo (ክትፎ)? It's minced raw beef that's mixed with a mitmita, a blend of Ethiopian spices, and then some Ethiopian butter known as nitter kibbeh is mixed into the meat. The spices and butter give the minced beef some extreme delicious flavor. The meat is served with injera, the staple, and also some extra pieces of hard bread known as kocho - this was my first ever time to sample this bread made from ensete (similar to a banana) flour. The kitfo (ክትፎ) was served in a bowl, with gomen (collard greens) and a couple of different cheese on the side. I was so excited to dig in for my first bite as soon as it arrived, it was a huge pile of meat! That first bite was absolutely sensational, I could hardly contain how good it actually was! The meat was so well seasoned and it really just melted in my mouth. The kitfo went extremely well with the injera and also the kocho bread.

I live in DC near the largest Ethiopian neighborhood in the world outside of Ethiopia, I can have kitfo delivered to my house whenever I want. Never get tired of it. Ethiopia has the best food culture, so diverse and comforting.

+Gina LaFionda In Switzerland, I don't think it's safe as a tourist to be eating raw beef in a country that isn't yours. I am a fourth year medical student, your digestive-immune system is used to pathogens you were brought up with. The variants of E. Coli from other country can give you a bad digestive infection, not talking about the parasites, and potentially hepatitis virus that can be contained in the food.

+Latchme Ramdan Raw meat in 3rd world can be dangerous. Also there's huge difference between steak and hamburger. since in steak at least exposed surface is cooked. Beef is one of cleanest animal except factory grown ones have diseases and use antibiotics.

i love and miss Ethiopia, i lived in Addis Ababa in bole road near the old airport with my mom and brother in 1993 to 1995 and at the time i was 7 and we left when i was around 9 years of age. mom was a diplomat. i enjoyed the food a lot, especially blue top, thats where you get amazing ice cream and plus the people are sooo hospitable. i love enjera so much!!.. i had a lovely experience back in my days, oh ya, kitfo was my favorite hands down..sending all my love from Namibia :-)

My mom makes hands down the best kitfo, also the sticky break is made from the false banna tree. The green is colour greens and the white was reduced milk made into a cheese like dish. The meat has different spices and a special ethiopian butter for flavor. Don't knock it until you try it people.

In my country (Slovakia), we are eating dish calling "Tatarsky biftek or Tatarak, its raw minced beef too with spices, egg yolk and toast-bread....DELICIOUUUUUUS!!! :-P

I would really like to try this dish. I'm putting the flavors in my head and think it would be quite tasty and especially healthy, because of the raw factor. Raw/ semi raw red meat is considerably easier to digest than fully cooked meat. Also, the side of fresh cheese and 'super veggie' collard greens, enhances the nutritional value of the meal. I love seeing the way he enjoys food! Bon apetit! :)

I've had the cooked version of this dish and it was literally the best dish I've ever had along with beef carpaccio, and this is a bit like a combination of the two, so you can imagine how much I'd love that one :-)

Mark, have you had raw beef larb in Thailand or laos? In the hmong community, it's eaten at special events when a cow is slaughtered and they make the raw beef into larb.

Ethiopian Food is Amazing. Kifo is the ultimate Ethiopian Food. That rubber looking bread which is called kocho is made out of a plant root called inset which is like banana plant like. Mouth watering. Great video!!!

When you're eating food using your hands, it helps a lot when you push the food into your mouth using your thumb. It makes it much more easier to be able to grab more food :)

If the meat and the preparation is clean and free from contamination, eating raw beef in Ethiopia is much healthier than eating raw beef in the West. Because Ethiopian beef is 100% organic. BUT while the West feeds the animals with hormones, anti-biotics and GMO foods (largely absent in Ethiopia) which could be harmful to human health in the long run, the Western countries can at least almost always guarantee that the meat and the sanitary conditions of its preparation, will be free from hazardous bacteria and parasites which can seriously harm and even kill humans on the short term. Ethiopia and other third world countries cannot do the same. I have eaten kitfo in Ethiopia several times. I was fine all those times except once when I almost died of food poisoning and a parasite infection and this is very common in Ethiopia. You take a chance every time you eat or drink anything that hasn't been properly cooked or processed and isn't an unpeeled fruit, when you're in the third world. Let alone raw meat. So on the short term I would say eating kitfo is probably safer (statistically) at an Ethiopian restaurant in the West than in Ethiopia. On the long term though, it's probably healthier to eat kitfo or anything else in Ethiopia than a standard Western diet.

But, Ethiopian beef can carry tapeworm parasites that could cause serious health problems as the parasite/s enters the body & an entire tapeworm colony forms in the raw-beef eating person's intestine. In that sense, it is MUCH safer to eat a 'kitfo' made in the USA or Europe where the beef is tapeworm free, as the cows are fed on tapeworm free grass or other animal feed. It is better to consume a less organic beef than one that carries tapeworm parasites. You agree?

@@Minzies2 Um, I've actually seen Jamaicans and Filipino that look identical and a Chinese guy who looked like someone i know from Ghana before. Asian isn't an exact look like how you believe white, black and brown are. You can find any type of feature in any type of skin tone in this world... you ignorant xenophobic mental-case!

Mark.. Just wanted to say I just tried this at an Eritrean place. They had it on the menu..I was so looking forward to it..This place messed up my order three times..They brought out the wrong order and when I told them they took it back in and brought out another which was cooked kitfo and a Veggie Sambusa..I wanted the meat sambusa.. Told them it was the wrong order again. Third time should be right..But it was getting late., I asked to make it a takeaway.. This time the kitfo was cooked and the sambusa was correct. Your kitfo looked much better.. I hope to try another place and I hope they get it right..

Nice video, Mark! There is a Korean dish called, Yookwhe and it is made with the freshest raw meat, half frozen, minced by hand and seasoned with shoyu, sugar, black pepper, sesame oil and served with cucumber, apple or pear matchsticks. It is topped with a fresh egg yolk. The meat and egg source must be from the cleanest butcher and farm (a knowledgeable and trustworthy source) and is most delicious and refreshing. I've eaten it all my life and never been sick a day for it. I hope you get to try it someday, Mark. You seem adventurous enough! Next time when you're back home in Hawaii, go first to, Million Restaurant, or try Hyung Jae Restaurant or Sorabol to eat the best Yookwhe EVARRRR! Easy to find and you won't regret it.

Wow Mark I've been following yur videos. I thought you wouldn't like Ethiopian food. Can you please put a comparison with western, Asian or any other area food not in a sense of bad or good, just similarities in ingredients taste and so on. Thanks a lot
