Eton Mess Summer Dessert Recipe | Cupcake Jemma

If I had to eat one dessert for the rest of my life it would be Eton Mess. It's so simple but BOY is it good! My favourite fruit, The Strawberry, gets married up with just-whipped cream, crispy chewy meringues and raspberries to create the most moreish dessert you'll ever put in your gob!
Ingredients
I always improvise Eton Mess as any combination of these ingredients works but to give you some idea, here's a rough guideline to get you going.
1 punnet of seasonal strawberries (get them locally if possible)
3-5 meringues, home-made or shop bought (see my full Meringue recipe vid here: • How To Make Perfect Me... )
100-200ml of double cream
1-2 punnets of raspberries
60g sugar

Yes if you like. The raspberry adds a different element to the overall pud as they are sweeter and more fragrant but if you want to use a different berry then it will be delicious too

My mom had a similar recipe in her McCalls' Cooking School 1985 magazine , I think it was called Royal Meringue Dessert. Made with meringues, heavy cream and bits of navel oranges, pineapple, seedless grapes, a banana, and peaches to form a pyramid, absolutely my favourite!

I baked some meringues yesterday. After 25mins baking and let it cool down in the oven, my meringues still wet and not crispy. Then I baked it for more 25mins and the result is perfect. Thank you for recipe.

due to the time of the year British strawberries were in season so they are really sweet and delicious. It's just about using local fruits when they are in season instead of fruits which are sometimes forced to be ripe

Sorry, just use strawberries which are in season and preferably from your country. I only ever eat British Strawberries in the Summer when they are in season and at their best. But you should use whatever strawbs you think are best, in my case it's British ones.
