The 3-2-1 technique for smoking ribs is pretty well known in the barbeque community. It produces the most tender, succulent baby back ribs you can imagine. In this video, I utilize this smoking method along with my keto BBQ rub and sauce to create some crowd pleasing ribs.

Technique:
1) Preheat smoker to 225F (110C)
2) Check underside of baby back ribs for a membrane and if present, remove it.
3) Coat ribs with yellow mustard and apply BBQ rub (approximately 2TB / 30g to the top and 1TB / 15g to the underside of each rack)
4) Smoke ribs for 3 hours
5) Place ribs in aluminum foil with the steaming liquid of your choice (diet soda works well) and wrap tightly
6) Return ribs to smoker for 2 hours
7) Remove ribs from foil and brush with BBQ sauce
8) Return ribs to smoker for 1 more hour
9) Serve with additional BBQ sauce, if desired

I took the Aaron Franklin BBQ Master Class, and he teaches the same technique. The only difference is during the 3 hour phase he sprites the ribs periodically with a 50/50 apple cider vinegar and water mix. He also uses that in the steaming phase. I use this method and love it! The ribs get so tender the bone pulls right out.

I made beef ribs in an Instant Pot yesterday and they were so good. I rubbed them with a rub I bought at Aldi (I read the ingredients and it was clean)) and a sugar-free sauce. OMG even my picky son loved them. I wish I had a smoker!

I finally made these yesterday. My husband clocked the sugar substitute right away so he didn’t like that but he did like the cook and was ok with the rub kind of lol. I’m going to share with my mom and brother since they are doing Keto. I loved bring able to have BBQ!

They look amazing!! I don't have a smoker, but use my instant pot to make mine. Once they're done, I add sf BBQ sauce and broil until they have a little crisp to them. Always come out tender. I may need to invest in a smoker.

Love that you're going with one temp throughout. One less thing to concern the cook with! I used to fiddle with temps until, like you, I settled on 225 throughout As for the membrane, best way I found is to put a flathead screwdriver on one of the bones in the middle, and slide it away from yourself along that bone, getting under the membrane if it's there. It pops it up, and makes it way easier to remove from the middle to the end, instead of pulling it the whole length of your ribs. No special tools needed, unless you're someone who doesn't even own a screwdriver. A fork can be used with the same process, but the screwdriver gives so much more leverage After applying the rub, let it sit for just a bit, until it looks like your rub has absorbed any moisture - the color of the paprika in the rub will noticeably change, letting you know when it's ready to go. For me, it seems to stick better when doing this Love that you brought this to so many who follow you that might not otherwise have considered trying this. Doing them on the grill is SO worth it.

I combine the first two steps with sous-vide at 180f for four hours, with a salt, pepper, paprika, apple cider & mustard based marinade in the bags. (sparingly - it's just to help things along) Then clean them up, sauce them with Steve's Keto BBQ sauce because I love his sauce, finish in over at 225f for an hour or two. I saw no difference so far an extra hour or two @225f - it's like a keep-warm setting - so they are ready when your company shows up inevitably late.

I like that membrane that most people remove. Depending on how you cook the ribs, the membrane has a bit of crunch or chew. 😊

I've made these 3-2-1 ribs a few times, not Keto, but they are everything Steve says they are. My next 3-2-1 ribs will be this recipie. I'm looking forward to warmer weather and feeding family and friends this recipe! Thank you Steve! I've also made ribs in my Instant Pot, they're good, 3-2-1 ribs are Out Of This World! So much better than the IP. But hey, everyone should try them both ways.

I would recommend brushing the meat with liquid smoke before apply the rub. That will help. Good luck!

I use this method as well sometimes i use duck fat spray as the binder instead of mustard,and i use apple cider vinegar when i foil them

Always love your bbq videos!! Is this the first time you did the 3/2/1 method? I usually only do mine for 3hrs but am thinking it is worth trying this way. We have been smoking and BBQing all winter. (Northeast PA) We make BIG batches of your rub (with a couple tweaks). It is amazing on everything!

It depends on how much time I have. This is my preferred way, just because the whole family loves the super tender style. I think Terry is the only one who like "gnaw at the bone" competition style ribs.

The biggest problem I have with the 3-2-1 method is getting the rack off the smoker in 1 piece! It really is flawless every time. Looks like I better defrost some ribs now!

I don’t think I’d buy another MasterBuilt product. There are some issues I’ve experienced with the control panel and their customer service is rubbish.

Unfortunately, that leaves me with only 2 other choices (locally), the Bradley Smoker which I don't like the idea of being forced to purchase the wood "pucks" for (at twice the price) OR the Ninja Woodfire 7 in 1 which looks good but is just too small for all of your recipes I want to try. Is their any others you'd recommend or at least have your eye on? .. Sorry for monopolizing your time, I can't imagine how busy you must be.

These look delicious! Any suggestions on how to cook them if one doesn’t have a smoker or instant pot? We have a smoke feature on our grill but have no clue how to use it, lol. I guess I’ll have to find the manual. Thanks for sharing.😊

This same method could be used in your oven. I'd consider brushing the ribs with liquid smoke prior to applying the rub. Also maybe have a pan of water in your oven during the first 3 hours to increase the humidity found in a smoker.

Oh, man. The catfish skinning pliers brought back a somewhat traumatic memory. My big brother was an avid fisherman and even ran a business of taking folks out on his boat to fish. I won't give any more details other than to say that the catfish he cleaned and cooked was extremely fresh.

I would love to see a blood glucose test of you eating some ribs with your rub and another test with something like Meat Church honey hog. I’m curious how much the sugar in it would affect the BG and see how much of a rise there is.

I can tell you that my rub has no impact on my glucose. And given how much I like my rub, I don't see a compelling need to try a commercial brand, but if I do, I'll post the results.

@@SeriousKeto What I meant was, I'd be interested to see if you used a rub with sugar and even added brown sugar to the outside when smoking, how much of that actually stays on the rib and what kind of glucose response is there. Is it 5% higher than a keto rub and no brown sugar? is it 50%? It would be interesting.

Why not leave the membrane and just make some crisscross knife cuts along the length of the rack? I know these don't have the membrane, but it's natural collagen 🙂

Sadly, it seems all electric smokers are flawed in one way or another. For the MasterBuilt, the issue is that condensation builds up in the control panel and eventually, it quits working. Likely for my next smoker, I’ll go with a pellet feed unit - probably RecTeq.

Thumper. And he's 19 years old... Also, you could probably do this method in an oven at the same temperature. You could brush the rubs with a little liquid smoke to simulate the smoker.

What is the alternate cooking method if we don’t have a smoker? I may be inspired to buy a smoker, but until then? (I have a Kamado Joe Jr. but it’s impossible to control the temperature!) I also have an Anova Precision Oven. Oh, and TODAY IS MY BIRTHDAY! Your response would be a great birthday gift.

You could probably do this method in an oven at the same temperature. You could brush the rubs with a little liquid smoke to simulate the smoker. Also, I have one of these for my Kamado Joe: amzn.to/3TOj9Wb PS - Happy birthday.

If we don't have a smoker, do we just put them in the oven at the same temperature for the same amount of time? Or should we change any settings? What do you recommend for those of us without a smoker?

That should work. You could also brush them with some liquid smoke before applying the rub.

@@SeriousKeto Thank you! I did them in the oven and used your rub. I was short on time and ended up using store-bought BBQ sauce. Sweet Baby Ray's makes a no-sugar-added sauce that's significantly better than their sugar-loaded regular stuff. The ribs turned out AMAZING! Everyone loved them and we finished them all! Thanks for the video and all your time/efforts!

Okay, just finished dinner! Steve's recipe is AMAZING! Here is the steps I used for making baby-back ribs in the OVEN. (Most of these steps are from Steve's recipe, but just adjusted for the oven. So, here we go: Preheat oven to 225F Check underside of baby back ribs for a membrane and if present, remove it. Pat dry ribs with paper towel & then brush top side with hickory liquid smoke & let rest for 7 minutes. Brush both sides of ribs with yellow mustard and apply BBQ rub to both sides.. Cut ribs into sections with scissors. (I like to do this as it makes the ribs easier to handle.) Place ribs in a disposable aluminum foil pan, meaty side facing up, and place in oven for 3 hours with a small bowl of water for moisture. After 3 hours, remove ribs from oven and add liquid of your choice (diet soda works well) and cover tightly with aluminum foil. Return ribs to oven for 2 hours. Remove ribs from oven, remove foil, and brush liberally with BBQ sauce. Return ribs to oven (with bowl of water) for 1 more hour. Remove ribs and lightly brush with BBQ sauce. Serve with additional BBQ sauce, if desired. ENJOY!

@@mikegibson7996 I tried your oven method today and was conscientious of following all the steps. There were a few spots at very edge or on top that got a bit dry, but overall, these were great for us folks who don't have a smoker. Thanks for sharing the variation Mike.

Try using a paper towel to take the membrane off. It works just as well, no tools needed.

Same method will work in an oven, and you could brush the ribs with liquid smoke before applying the rub. Also, depending on how dry your oven runs, you may want to spritz the ribs with a 50/50 mixture of apple cider vinegar and water a few times during the first 3 hours.

I know you get asked to review a lot of stuff .. but I would REALY appreciate it if you would consider reviewing HLTH Code shakes … they are clean and keto friendly and formulated by Metabolism legend Ben Bikman ….I just heard of them .. and I’m wondering if they are any good … if you can’t I understand

I hate to be “that person” but …. Just to be picky, rib meat that falls off the bone is actually overcooked. It’s a common misconception that perfect ribs means falling off the bone. We do competition bbq, so we’ve learned the hard way lol! The 3-2-1 method is great, and your rub is yum!!
