Famous Traditional Ice Cream in Iran (Akbar Mashti). In this video, I will show you how to make Persian traditional ice cream. locally known as bastani sonnati or bastani sonnati zaferani, is an Iranian ice cream made from milk, eggs, sugar, rose water, saffron, and pistachios. It is known widely as Persian ice cream. Bastani often contains flakes of frozen clotted cream. Also, salep is included as an ingredient.

Hi Sara from Texas, USA! Thank you for this recipe! Question: I live in USA & noticed that the cream that you used was very thick & not very liquid. What kind of thick cream is that? We have a dairy product called "sour cream" that is that thick. Could that be what you used? ...or something else?

Ron, sorry for the intrusion. Sour cream is different, this cream is called Clotted Cream or Kaymak very similar to Devonshire Cream. I have used Crème fraîche instead with very good results, since finding clotted cream in the US is not that easy. You may be able to find clotted cream in your local Persian or Turkish groceries.

Bought the genuine Iranian saffron, then the rose water.... and that's when I stopped. The rose water tastes like soap to me. I conclude it is very much an 'acquired taste'.
