I usually ferment my eggs for egg salad, but this is a much faster option for a probiotic meal than waiting a few days, haha!

Love your kitchen ingenuity using the whisk! Fermented mayo is on my to-do list now. Have never thought of adding sauerkraut to egg salad. I might try kimchi instead. Time to head to the kitchen to experiment on a gut healthy brunch. 😃

Great video! I've never liked mayonnaise (both the taste and the ingredients in most store bought mayo) but I do use it when I make chicken / tuna salad and potato salad. This homemade recipe is so much better and I will definitely give it a try (with whey however since I don't like pickles either and I don't know if the dill flavor will be in the mayo). Thank you.

I've been fermenting mayo for a short time. I've been super happy with my results. I accidentally left the salt out of the last batch. I found that I prefer the taste without the salt. Is the salt in the mayo recipe essential to the ferment process, or is the 2 tbs of active liquid sufficient? (I use the liquid from my fermented pickles.) Btw, I love your videos. My wife is always referencing your channel.

I'm going to assume you should use a new ferment only because of the eggs. I'm not 100% sure about this. I don't know why I bother fermenting our mayo since we go through it so quickly, LoL!

Help...Can I use the juice from the Cleveland Kitchen dilly garlic pickles? They say they are lightly fermented....if not i also have a kimchi from the cleveland brand too... thanks

I’ve not heard of that brand before so I couldn’t answer for sure. Check the label to see if it says raw or pasteurized, if it’s raw you should be good to go

You could use any dairy product that has culture in the ingredients. Yogurt, creme fraiche, cream cheese, etc. Just make sure they are natural and no sugar added.

This looks so good.Love the kraut in egg salad idea think kimchi would be good too. QUESTION i was gifted Ole smoky tennessee moonshine pickles .They are sooo good but cant see if are probiotic. THEY are alcoholic pickle has warning on jar..haha

Newbie to fermenting my mayo, I’m having a hard time with the taste from using the whey from yogurt. How was the taste when using the brine you used? Do you have any suggestions on a fermenting ingredient that is mild so I won’t be able to taste it??

I had some of the same beautiful chickens you put one in chicken hospital for getting pecked by other chickens. I questioned friends and learned, they needed hamburger meat. When I questioned why they told me chickens need meat proteins, feeds only supply plant proteins. Sometimes worms or crickets do not come out in dry or to wet weather. It worked for us.

When you do the egg mustard salt vinegar place into the jar and blend. Then slowly add the oil. And blend well between oil additions. Hope that helps

I’ve always been told to make sure to refrigerate Mayo. I would be less worried about it if I had farm fresh eggs

For a long time mayo was wrongfully give a reputation for food poisoning in mayo based salads like egg and potato but they discovered it was the other ingredients when it was left out. The fermentation process will keep it safe if you start with good ingredients :)

I use bacon fat for most of the oil and horseradish rather than whey and make in my 500 g glass jar to reduce need for dish washing😄

I was able to make it with bacon fat once, best Mayo I’ve ever had! But we usually cook with whatever little is left so saving up an entire cup is quite a feat

You sure can! Greek style yogurt won’t work though because it’s already been strained. Just let it sit for a couple of days in the fridge and that liquid that forms is the whey

A couple questions. How long will the fermented mayo last? I JUST made mayo for the first time last month (didn't ferment it (didn't know I could!!!)), and that recipe said 2 weeks in the fridge :( who can use that much mayo in two weeks?! Also, my recipe used a whole egg. Any reason to use yolk vs whole egg?

Oh goodness no, people get it from the potatoes…usually improperly home canned potatoes. I wouldn’t leave out store bought Mayo for very long. The fermentation preserves it and I do put it in the fridge after it has fermented

Ooh. I have a freshly fermented Kimchi. This would be an amazing ferment add to the mayo and then in the egg salad.
