Every culture has its own unique take on barbecue. In the Philippines, the holy union of meat and fire is a meat-lovers' dream. Cooked on skewers and paired with some San Miguel beer, Filipino barbecue sets itself apart by slathering a 7-Up and banana ketchup-based barbecue sauce on slabs of pork and chicken. At Brooklyn's FOB, chef Armando Litiatco takes the fun of street food and combines it with the familiar flavors of his Filipino childhood. Sticky, tangy, and fall-off-the-bone tender, dishes like FOB's chicken inasal and grilled spare ribs are a must-try for barbecue fanatics everywhere.

My cousin married into a Filipino family and every time they held a party i always felt like our mexican culture simply clicked with their filipino culture, especially with the food!! My god this bbq food just looks amazing! Has my mouth watering and i just finished eating lunch! Cheers from a mexican fan of Filipino food!

Spanish cuisine is one of the influences in the make-up of Filipino cuisine. You'll also find Chinese, Japanese, American, and Malay influences, which make Filipino food very diverse.

For those put off at the sound of 7-up and banana: Banana ketchup basically tastes the same as extra sweet ketchup. The marinade tastes just tastes like teriyaki, we use 7-up as the sweet element alongside soy, instead of honey. So if you haven't tried filipino bbq, it tastes way better than you think it is :))

I never laugh at a flavor profile of a food nor do I mock regional cuisine, there is always a story behind why people cook as they do, how they store and preserve food. Learn the story behind the food learn the story behind the people.

Ahhh... memories. Eating in Kongs with friends, food piled in the center of the table on a lazy susan, chilling downstairs in the Cork Room, listening to incredible acoustic musicians while enjoying the best lumpia in Olongapo, and, of course, walking down Magsaysay Dr. and paying street vendors 3 pesos for several sticks of the most delicious mystery meat barbecue.

Filipino BBQ is so different in every region with different marinades and sauces that make the meat so delicious. But they all taste great no matter what region of the Philippines the recipe is from.

When I was a young dude, my main skateboarding buddy Sy was (still is) from a Filipino family. His folks spoke Tagalog at home, but to be fair my family spoke Polish and I would translate to Sy that same as he'd do for me. We spoke English together, but both our families were weird outsiders in our town, so we had a common thread outside of skating. My Mom did some dope American style BBQ chicken, but the skewers I got at Sy's were so bomb. I made the mistake of asking my mom to ask Sy's mom how to make them, and it was a venomous afternoon of Mom battle of who was the best momcook. Luckily our dads got along, since they both served in the Navy and liked the same beer, but I think I ruined it for our moms to ever get along after that summer, even though they're exactly the same, personality-wise. Come to think of it, that was probably the major wrench in the works, since they're both alpha boss females. The letter N isn't in their alphabet. It's just O followed by "you're right". I'm 41 years old and my mom still sarcastically asks if I want chicken skewers instead of "real chicken" when my wife and I visit the first time of the summer.
