I looked at the comments down below and it’s amazing that everyone seemed to like Filipino adobo! I’m Filipino, and I had to google how to make adobo because my mom couldn’t be bothered. She said: “Just google it!” Yours is amazing! Loved it! But, my mom uses sprite instead of water because it tenderizes bone-in chicken. However, if you have boneless, just use sugar and it’s good too.

@@Its_kattx with bones, just sprite is fine. However, depends on your soy sauce too. Because you need to balance the saltiness with sugar, vinegar and etc. Tbh, I like using both, but not too much sugar, please!

This is the one. Looks like a nice thick sauce. Making it tomorrow Tomorrow: ok, I made this for family and we all agreed on less vinegar. I would cut it by 20% to start. Also add 10% more brown sugar. But it was good 🙂

I don’t know which vinegar you used but in another recipe the host specified that often cane vinegar is used and that it is much milder than white vinegar.

@@kaktusdesiberie7196 oh you can use apple cider vinegar as a perfect substitute. The recipe calls for a more milder tasting vinegar. If you have nothing else white vinegar will work. You just need to use more sugar to balance out the sourness of the white vinegar.

I watched many adobo recipe, this is the most accurate. You should cook first the leftover marinade then the meat.

I'm cooking it right now. It smells epic! I can only hope it will taste as good as what's waffling through my kitchen door. I've tried twice before to cook Filipino food and failed miserably. One was Kinilaw which I tried once when I was in CDO, but that was a disaster to make. Couldn't get the right fish in England and the other was Bicol Express.

@glor2478 It was outstanding. My filipina gf told me over Facebook video call that 1 table spoon on peppercorns was far too many and that I should only have ten or so instead. As I like pepper, I opted to follow the recipe given to me. When I'm back in Dipolog, I'll see if I can slip in a tablespoon of peppercorns unnoticed.

I just made using boneless chicken legs. This one is a 10! I served with risotto. She's right...you can't use a breast because it will dry out. The vinegar tenderizes the meat.

I tried this recipe, it turned out great. But it was a little too acidic for me. So next time, i will reduce the vinegar a bit and increase the sugar by a TBSP

Did you use a skillet for this? It doesn't seem to be a normal frying pan used to get through the chicken thigh to cook it as perfectly as you did. So please share what pan you used? Thanks x

I’ve used a regular pot to make it. I’m sure you could use a frying pan *_or_* skillet to make it. I guess it depends on the amount of chicken you want to use and how much sauce you want to have.

Fyi, the chicken will continue to cook after you add the sauce. Just make sure it’s on medium to low heat and stay there to keep watching it so it doesn’t burn.
