His character arc was coming to an end along with his contract, the money paid to him rose because he became a less risky actor. Since in order to use them again, one would have to collect all the atoms of the infinity stones and recombine them. Which needs the snap itself to be possible in the first place. I thought the stones were more like controllers or a User Interface, than the entirety of what they represent. They were made from the building blocks of the universe, and they allow someone to manipulate the universe, but not literally the universe itself. The space and reality stones were also destroyed, but space and reality still exist.

well Thanos stated first that he "reduced them to atoms" and a few minutes later that he "used the stones to destroy the stones" so it depends on your definition of destroy. when something explodes for example, the atoms that make it up don't cease to exist, they're still somewhere in the universe (usually on earth) just in varying degrees of disassembly so as to not resemble the object they used to be part of. so again it depends on how you define "destroyed."
