I spent many days watching and listening to my grandmother clean chickens and chop them up while she sang. She used to sing a song about, what she called the "tonky" bone. She was referring to the tail bone. She would leave it on the thighs because it tasted so good when fried. People in my area used to refer to chicken as "gospel bird." They referred to it as that because the preachers would eat dinner with a different family each Sunday and everyone always served fried chicken. The old folks had some interesting sayings and funny stories. When my grandmother was setting her will in order, she asked me what I wanted. I was the first grandchild, so she let me pick first. I told her I just wanted her cast iron cookware. She just laughed. She taught me to cook in those pans and she had them well over 50 years. You could fry anything in those pans and it would be delicious. So, not that she is gone, any time I cook in those pans, I get to enjoy those memories.

Tip = If you want them to be nicely yellow, feed them only corn for the last week (ground - it must be ground), they are much finer and clean themselves well of all the food they ate until then! I have many years of experience in this! 😊

Thank you for the kind words! We saved the feet, heads and necks for stock. The liver, kidneys and heart we give to the dog cause she loves it. We also used the carcasses for stock as well.

I guess in comparison to those with flavor, yes the tender would be the equivalent. But the tender is on the breast side not the backbone side.
