I was in Thailand just last month and Chiang Mai was my favorite place. It was just what I was looking for as far as a local experience, culture, temples, and tranquility. It was incredibly peaceful. Be sure to also check out the sunrise or sunset at Wat Prathat Doi Suthep temple overlooking the city of Chiang Mai, totally worth it.

I had sushi twice from a night market. Both times in Chiang Mai and I am pretty sure one time from the one you are at. It was yummy and I had no issues at all. Both times it was right when the market opened and both booths looked very clean. However, I do understand the hesitation.

We loved the Sunday market. Once we were exhausted, we went to the temple for a foot massage. No sushi from market. For me raw fish sitting out in that heat is probably not a great idea.
