Very impressive work! Your use of the tongs and rag as a sword and shield are stellar! I also feel like there's different Temps to the level of your fire oven which makes for good reverse sears on that salmon as well as making sure temp safe first then finishing with the fire(searing I think)

You’re exactly right. The top of the oven is much hotter than the bottom, and the temperature of the entire oven varies all the time so finding the sweet spots can be pretty difficult. I appreciate the feedback!

I am so glad you are back. Please tell me you will be putting up more vids. It is a pleasure to watch your skills at work. I am retired from the kitchen and my business so it is wonderful to watch you go at it and makes me feel like it is I that is doing the work. Although to me it was not work, it was a joy to be able to make people happy through my food. Thank you sir for what you do. I hope to be able to sample some of your food one day, I am living in the Knoxville TN area so maybe one day perhaps.

Watched two videos so far. It seems like you drop some carrots every time you plate them. Maybe you should change to an oval ramekin for them. Otherwise, good work, watch out for the par-cooked salmon.
