Hi there, this is how I make my aloo paratha with cheese except that I use ghee for my layers and don't use any oil in the pan before placing to cook. I dry "fry" to ensure it cooks through; then brush before final turn (I'm sure you know how I mean). It's all good though and will definitely try with crushed red chilli and parsley and garlic. Keep up the good work.

This bread is called "bazlama" or "cızlak" in Turkey. My grandmother used to make it. In the old days, since there were no gas or electric ovens, it was made on a big pan over a real fire. The one made from liquid dough is called "akıtma". Similarly, it is also made by frying in oil, also called "pişi". There is a similar one made of much thinner dough to put something inside. Its name is "Yufka" or "Iskefe". There is an appetizer made by putting cheese, potatoes, dill ..... etc. inside the yufka and greasing it. It is called "gözleme". Various kebabs (döner kebab, tantuni, shish kebab, adana kebab) are wrapped in yufka bread and eaten. This is also called "dürüm". These are the ones that are baked on a sheet or pan. There are also bread varieties baked in the oven. Of course, there are many more types of baked goods (tırnak pide, ramazan pidesi, lavaş, balon lavaş, teknedibi, somun, fırancala, mısır ekmeği, Vakfıkebir ekmeği, Amasya çöreği, tandır ekmeği, köy çöreği, kül çöreği ...). You can search for all these terms to find out how they are made.

Here's a tip I think you'll like. If your dough is too sticky to knead but you don't want to add more flour which will make the bread denser , roll the dough into a ball then throw it against your counter/ pastry board until it has a smooth elastic consistency. Don't ask me why but It works like a charm . Give you the lightest fluffiest breads ever and practice for your throwing arm.😄

It's commonly called the 'slap and fold' technique. We use that method for sourdough bread making because of high hydration dough.

I bet it would taste just as good using half the amount of oil or even less! I'd use more than a 1/4 teaspoon of garlic powder also.

Using cups and tea spoons and table spoons is very sensible. There are times when a scale isn't available then standard volume measurement gives a starting point for a recipe. Standard volumes as a system is hundreds of years old and doesn't need anything more than a standard volume.
