On the Iron Chef website they detail the BTS on how they go about ingredient selection. The 2 chefs actually vote on the top 3 ingredients that will be the options chosen at the recording. They are given a couple weeks to prepare based on the knowledge of the 3 ingredients they voted on together. I believe they are also allowed to submit special ingredients they would like to bring onto the show for approval.

you forgot the fact that Gordan Ramsey has a tv show called the great escape where he travels all over the world and learns the culture and cuisine of the country/ region has and then he cooks for some important person in that region. What he cooks in that episode is based on what he learned in the area from local cooks. Here are some of the places he traveled to Mangala Express train in New Delhi, Northeast India, Kerala, Cambodia, Vietnam, Malaysia, Thailand. He learned how to cook Cambodia cuisine and cooked curry for Cambodia royalty. He learned a lot about local cuisine in many countries and he will win in the cook-off.

The taste of water depends on the contents of the water, such as minerals. It also dempends on where the water is from. Is it from a purification station? Is it from a lake? Is it from a well?
