@semilianooo I don't think that weird at all. I was thinking more along the lines of cold pasta salads. I find that they usually have a strange, almost metallic taste. Bolagnase sauce would easily drown that flavor out. Even if someone does enjoy the flavor of cold pasta salads, that doesn't mean they're "weird." It just means they have different tastes than I do.

Pasta is supposed to be shocked in ice water anyways to prevent the pasta from continuing to cook after being removed from the stove. As such, it’s the sauce that you add to the pasta that should be served hot with cold noodles. Hopefully, this will slot well into the idea that reheating pasta will increase the resistive starches.
@pistincup352
@pistincup352 6 ай бұрын
Like, who’ll do something like that. I like my pasta hot, and my sauce hot as well. Only when they both cool down and I’m eating leftovers will I ever decide to reheat it, even if it’s better for me to do what you just informed me. I can’t change my ways in a snap of a finger (trust me, I tried doing such with my laziness, and it always fails). Now that I’m ranting about this, I wonder how it tastes 🤔
@Jerryfan271
@Jerryfan271 4 ай бұрын
@@pistincup352 Just because you don't want to do it doesn't mean other people think the same way. The reason we shock pasta and noodles in cold water after cooking is to create a more appetising texture. It's the traditional way to cook it.

I used to work at Olive Garden. All of the pasta you're eating there is cooked, chilled and reheated before service (except in rare cases when they run out of ready pasta and have to make more on the fly). This protocol is pretty commonplace in restaurants, actually.

@Shalakor

Never thought there'd be benefits to leftovers. Without even knowing about this science I've been in the habit lately of making large batches of pasta with the remainder to be used later. Might want to make pasta completely ahead of time now. Besides, while cold pasta with sauce isn't too great, some cold angle hair noodles by themselves are delicious, particularly if you added a bit of salt and olive oil to the water.

Your intro reminded me of the first time the Unlimited bowl was offered at the Olive Garden nearest our home. I chose that as my birthday destination and ate hearty... But not as hearty as my uncle. Who got us kicked out because he ate beyond their unlisted limit. And he and the manager argued and got us tossed out. He had his dad (a lawyer) OFFICALLY mail the corporate office from his office, got an executive payment card (AKA anything he and 1 guest orders is on the house for life) as well as the bill (for over a dozen people) refunded and a handwritten apology from the manager (who was immediately fired) and the owner of that location. All that to avoid a lawsuit. One of the reasons I love Olive Garden, we kicked their butts for their own problems

3:49 - and this is why I don't get the "never ending pasta" at Olive Garden, and regularly take home leftovers. In fact, portion size, is why I pretty regularly take home leftovers from any restaurant. I have yet to find a non-fancy restaurant (gifted the fancy dining experience) in the U.S. with reasonable portion sizes. In fact, even the bougie restaurants have small portion sizes, but often have 3-4 dishes, which kind of ruins the point of small portions. U.S. portions are just insane.

Food theory idea: Is taste objective and whether you like it subjective, or does everyone taste different foods differently? AKA Does everyone taste the same thing when they're eating the same food, and just have different opinions, or do they taste different things and have either different or the same opinion.
@vibaj16
@vibaj16 3 жыл бұрын
definitions at that level are not really concrete, but the best way to understand it is that we all taste the same things, but like different ones. What you taste and whether you like it in a way is really the same thing. We use the same mechanisms to distinguish tastes, but our brains interpret them differently. There isn't really even a shuch thing as taste: you like it to some degree, and your brain makes up different ways of liking things for different tastes
@sahasrakandukuri1859

I mean objectively speaking not everybody does, because some of those with synesthesia may have their sense of taste for a particular food register differently than people who don't have it. Plus any people who've lost their sense of taste, but if you're only looking by default at those who have a functioning sense of taste then uk
@iffeetaffee5458
@iffeetaffee5458 3 жыл бұрын
It is mostly subjective, however some people with different genes taste foods differently. For example, someone who has the OR26A gene will say that cilantro tastes like soap, because the OR26A gene makes you taste foods like cilantro slightly different.

question if you plan to revisit this topic: what category do those frozen single serve meals fall under? I'm betting you did dry pasta for this but think about the microwaveable frozen meals. in factory the pasta is cooked, placed in a bedpan with sauce and frozen until the consumer microwaves it and it's ready. so would it be under the reheated category? frankly with what I've seen factories do with any types food I'd still say dry pasta is healthier.
