Ms. Jaffrey is so charming. I adore her. My mother back in the 70's bought a multitude of her recipe books. My father was born in India

Madhur is definitely our virtual Indian food grandma/mother depending on age. She taught me so much about Indian cooking at home.

Living out in the sticks back in the 1970s, and with only three TV channels, Madhur Jaffrey was most people's introduction to Indian cooking (although we knew some retired folk in our village from the British Raj who would knock up a few samosas from time to time - my introduction to Indian food). I inherited my first copy of her seminal book from my mother and wore it out, and later bought another copy. She's a superstar!

Wow lovely seeing you again, you were /are one of my most inspirational proponents of giving honest advice on how to enjoy spiced dishes at home, i use that term because as you say politely it is wrong to assume that a Country the size of India has one cuisine, one guy i love to watch on his KZbin channel “Latif Inspired” who basically does BIR food for us to enjoy, i think he is Bangladeshi, it my sound like a silly bucket list but i intend at some time to have a meal at his restaurant in Stoke on Trent. Thank you so much for all of your advice over the years, i think if i am not mistaken i bought a Kadhi after buying one of your Videos, in-fact a small collection which i probably still have somewhere, i am going to dig them out but dont know if i have a device on which to watch Video. Thanks for your great content!

I think her understanding of a tikka masala comes from an Indian home cook's perspective. Almond powder, coconut powder, base gravy etc are a BIR (British Indian restaurant) thing. In India, they often use cashew nut paste as a thickener, for creaminess. BRITISH Indian food is an entirely different thing from authentic regional Indian food. In fact, most of the Indian food in the UK is considered generic by Indian/desi communities, and it's for the most part cooked by Bangladeshis.

The lady is a master chef, we all can agree on that. However she lacks a little bit about geography. India is not a size of Europe, as she says in MasterClass advertisement. India size is 1/3 of Europe. 3,287,263 km² does not equal to 10,180,000 km², at least to me.

I find it very amusing to see the invention of the term 'BIR cuisine'. Basically it stands for - British Indian Restaurant cuisine - a name made up by white British people to allow them to excuse the poor excuse for Indian food that they have been served up for decades by predominantly Bangladeshi immigrants. In order to not face the reality that dishes they know as Vindaloo, Rogan Josh, Dopiaza or Pathia are abominations of the authentic versions...and that dishes such as Madras are simply made up...white British people simply made their own standard...that of BIR. By doing that they gave themselves a defence against Indians who would accuse their version of Indian food as substandard. As a comparison, it's interesting to see that British versions of Italian dishes such as ragu bolognese or carbonara are not given the title 'BIR' as well...where the I stands for Italian rather than Indian. I have met many white British who will tell me (as an Indian who knows how to make authentic Indian food) that I don't know what I am talking about when I say that the British curry house version of a Vindaloo is simply not right. BIR is now used as a way for white British people to say...this is our food...not yours. But what BIR really is - is traffic light Indian food by numbers...with invented labels. Enjoy it if that floats your boat...but please don't try and make out that it's worthy of the I in BIR...😂

Chicken Tikka Masala is not Indian lmfao it was invented in England. Chinese is a bit more traditional but you wouldn't get most of the dishes in most parts of China/HK
