As a culinary kid, this lady's product upset me so much, especially learning that she didn't know about the FDA, any personal chef should have their ServSafe, and she would know about the freaking FDA just from getting that certification, let alone the other multitude of certificates she would need. I'm honestly astounded that she's even allowed to sell this. I remember when we set up a small pop-up concessions booth at a school festival, we had to have a licensed food health and safety officer come inspect our ingredients, food storage, food processing methods, prep surfaces, etc. to get the equivalent of a day pass to sell food to the public. Food safety is serious.

Some condiments are actually omitted from having to be checked by the FDA, but those sauces can't contain ingredients that spoil, like egg and dairy products. This is me going off memory cuz I watched another video on this whole thing, and that's what they said (might've been DeFranco), but I don't care enough to double check, and he does a good job of looking this stuff up.

@@Angelface11 Part of the problem here is it has made a decent amount of people sick, and is certainly sketchy with not wanting the original product tested. There is also the issue of the milk ingredient going bad, especially with such little insulation. Seriously was there even a mention on the label for any sort of refrigeration for that? Basically the only thing that saved it was someone else coming in and paying for it to be made as a safer product.

You are the one who does not understand. Something like mayo, which contains egg, is an extremely common allergen, and that HAS to be spelled out in the ingredients. What you are referring to are obscure chemicals that are not known to cause allergies to a great number of people. Food dye are another common thing to cause allergies and it, in most countries has to be specificied atleast by a number or code so it can be recognized by the consumer. @Angelface11

From a home cook perspective a lot of this makes sense. Seasoning mayo tastes nice and is easy to do. Which makes up for it's short shelf life. The dragon fruit is novel but also tasteless. That makes the taste of the official product worrying. Makes you wonder if everything has just gone off.

Honestly, with a fraction of the ingredients (garlic, salt, lemon and oil), she could’ve made an emulsion that would result in a middle eastern garlic sauce (toum) and then just colour it pink with dragon fruit powder and it would’ve been palatable and fun. It would’ve been creamy (though maybe not super squeezable) and good though still has issues like being perishable.

Im surprised the "milk" labeled on the bottle wasn't more talked about. It does say that it includes less than 2% of the stuff, but that was part of the discussion around the sauce since people were calling it out and chef p later made a statement clarifying that she was using powdered milk and thus was shelf stable.

@@Purplesquigglystripe exactly. Also many foods are shelf stable when closed but once you open them, then need refrigerated afterwards. Like canned pineapple are fine sitting on the shelf unopened but you open that can and leave it on the counter it'll bad very quickly. And that's not a "maybe", rehydrated powdered milk is very much no longer shelf stable. It will spoil like any other milk. This lady just has zero clue as to what she is doing. If she knows so little she should've either taken some night classes or found a food scientist or lab to pay to help her learn how to make it shelf stable. Those foods tend to have preservatives and stabilizers for a reason. And they have to be in the right proportions. Like you can't add a pinch of salt and call it preserved. Like to preserve meat in it, you have to bury and cover the meat in it entirely. Like you need a whole jar of it for just a single steak. (This is also way people used to soak and resoak their food in water before cooking. It was to remove most of the salt because it would otherwise contain so much salt that it wouldn't be edible.)

It already exists - it's called *Pitaya Powder,* and MatPat showed a packet of it near/at the End of the Video (16:24 to be exact). Even then, its only use in the recipe is as a _Food Colouring!_ All the flavour comes from _the Ranch and some Chili Flakes,_ subtly sweetened by _some Honey and Mayonnaise._ So not only does Chef Pii not have a feasiby genuine Product _in the first place,_ but she doesn't even own the rights to sell the _one Ingredient needed_ to make it *its eponymous Pink Colour!*

I am severely allergic to a certain food colourant, even the smallest amount triggers anaphylaxis so this is my biggest nightmare. There’s a reason why there’s a label on all foods with the ingredients listed. Also egg allergies are becoming extremely common so if she’s using mayo and not declaring it, she can seriously hurt a lot of people who try it

In theory, the binder could be the garlic. Toum is a middle eastern garlic sauce that emulsifies oil with garlic to get a creamy texture. But that doesn't sound anything like this pink sauce. But Toum, dragonfruit, and honey might be a great combo.

it makes sense why the Dragon Fruit would find no place in the taste category, cause Dragonfruit doesn't even have a signature flavor on its own. It tastes like a very watery, bland kiwi minus the kiwi's acidity. It's the fruit's crunchiness from the seeds that makes it so delicious and fun to eat (literally grab a spoon and go to town).

Prickly pears grow wild around here, so I just used those and a splash of cranberry in my copycat recipe since dragonfruit and prickly pears have similar flavors to me. It came out..not pink, but it was pretty tasty. Also had some weirdly good luck with kiwis mixed with cherry juice.

The 444 part was a printing mistake. She explained that in an update, but that shows just how sketchy this all is. She clearly prints out lables either herself or with a "team". Either way no one knows how the food industry works and just slaps anything on the label. So literally anything could be in it.

I doubt this lady is because of the pink sauce nutrition label being filled with errors and her not even knowing what the FDA is. Hi Matpat, Dragonfruit contains a natural emulsifier in it called pectin, and the spices listed likely include another natural emulsifier mustard. It doesn't look like you did a proper emulsion in your attempt at making the sauce which likely is why it resulted so watery

Fun fact: On the label it says one serving of sauce is 14.4 grams. Since it also says there are 444 servings per bottle, then appearently bottle should have roughly 6.4 KILOS of sauce.

fun fact: I work in a restaurant where we use dragon fruit for one of our drinks. I learned that the dragon fruit only adds color and not any flavor, so that might be why the ranch just tasted like ranch. :)

She’s a chef. Just like how many tv doctors are doctors… they aren’t. Also side note, in her videos she’s not wearing gloves OR a hairnet which is EXTREMELY unsanitary! Edit: I’m saying this because she is making a ready to eat product. In factories where they make ketchup, mustard, ranch, etc (i believe) they are meant to have hairnets (especially if they are someone with long hair) and are supposed to wear gloves and change them often. I was talking about someone who is making sauce that they are selling not a chef.

I think she might misunderstand what "personal chef" means. Maybe she cooks for herself at home and thinks that's all it takes, instead of actually being a professional hired by someone to cook for them. Either a mistake explaining her knowledge, if you want to give her the benefit of the doubt, or intentional exaggeration to sell her brand with the defense later of it being a mistake because she cooks for herself.

Her other social media does show pretty elaborate dishes and horderves she's seemingly made for upscale parties, so she may very well be a personal chef. You don't necessarily need to know what FDA stands for to pass a basic food handlers permit test and start working in a kitchen and a personal chef wouldn't even need to have a food handlers permit. She could very well just be the personal chef for some wealthy person somewhere in Florida.

FYI: Ranch is about 2/3 mayo to begin with. You could add 2 parts mayo to one part buttermilk and throw in a packet of Ranch seasoning. It's a lot cheaper than the bottles.

I was thinking the same thing. Between the lack of refrigeration, the complete failure of the "nutritional label," probably skirting shipping laws, and the outright fact that some of it has been dangerous; there has to be federal criminal violations here. It's how it's legal for people to have bake sales or set up a vending booth at different local fairs and markets. Actual permits aren't always needed.

UPDATE: A more reputable company took over the production of the pink sauce and the safer version is being sold at Walmart stores now. Also, if you're going to make a food product for the masses, being secretive with the recipe is a sure way to get sued for not listing potential food allergens. IJS.

actually SHE could sue lots of people (including Matt) for making unsubstantiated claims and defamation. there was nobody who got sick from her product and there was no botulism. They ruined her name and brand based on false accusations. Her product is actually legit. the channel "How to cook that" debunked all the false claims. Yes, her label being wrong was a legit claim against her but the rest was bullshit. also, lots of companies are "secretive" with their recipes and in fact coca-cola protects their recipe as a trade secret. finally, she wasn't lying about the ingredients, the dragon fruit is the emulsifier. even matt mentions it in the video but doesn't realize that it IS the emulsifier, he was just doing wrong (an honest mistake).

Not only does Chef Pi not know what the 'F' stands for in FDA, but she clearly doesn't know that mayo contains eggs. And her sauce label states: "May contain soy and eggs." Also in the UK, we have our own 'pink sauce' It's called cocktail sauce. It's basically tomato sauce and mayo mixed in equal quantities with a generous pinch of cayenne pepper. Or burger sauce which is the same as cocktail sauce, but has pickle relish in it too.

Okay, the biggest issue with the sauce was shipping in the summer heat. To combat it what she could have done was simply use dry ice to keep it cold, but instead she shipped a perishable sauce in extreme heat

I have been the saucier at a few restaurants and when I first heard about pink sauce, I knew nothing good was going to come of it.. It is sad that she was even allowed to sell the product in the first place.. Where I live, restaurants aren't allowed to get product from home businesses.. Because of this exact reason.. People who make stuff at home don't understand food safety most of the time.

Because she manufactures at home she falls under the states cottage food laws. She is still not allowed to sell perishable goods though. To sell perishable goods not only does one have to have a permit, but a proper facility to manufacture. Honeslty she'd going to end up getting sued one of these days, or worse yet arrested for selling unsafe perishable items and then she is sooo screwed especially if someone gets sick or dies.

Pink sauce lady would still have a social media career, if she just made videos of her eating the foods with pink sauce, like mukbang type videos and then finally at the end she shows everyone how to make it at home and there's a bunch of viral videos of ppl trying to make the sauce/testing it out. I can imagine tiktok collabs where they bring her in to help them make it etc. And then she can work on a different type of content or a new food type item before the viral-ity dies down

What I find most interesting about all of this is that pitaya hot sauce exists and could have been made with the ingredients she claimed to have been using (pitaya, honey, garlic, vinegar, onion powder, chili powder). Adding a small amount of stewed pepper like scotch bonnet or habanero would have resulted in a really good hot sauce. Just...if she didn't chase a gimmicky color, and knew what she was doing, she could have made a really good hot sauce. Also, if she was using preexisting brands for her product, should she be worried about lawsuits? It's one thing to use brand-name chocolate chips when you sell cookies (which is protected by cottage laws) but it's very different when you're seemingly just reselling a dyed brand-name product in its original packaging with a new label added over top.

When I saw "pink sauce" I honestly thought this was about one of my favorite condiments, the miria rose sauce or 1000 islands dressing. It's made with mayonnaise ;tomato paste and a little bit of paprika powder. It's lovely for chicken; fries and especially seafood. 😋

As a Marylander, an easy simple “pink sauce” is Ketchup and Mayonnaise… I usually only use it on when eating crabs but it could work with other foods🤷🏽♂️

That's called Fry Sauce where I am from. There are also a few variations depending on other ingrediats, if you used ranch instead of mayo, or added relish, or a half dozen other things.

I’ve been waiting for this video for a while, and the Food Theorists have delivered. This pink sauce everyone’s been talking about on TikTok had left me with so many questions. One of them being, WHY ISN’T SHE IN COURT??? You don’t just send out food products like a beta testing of a game! Aren’t you supposed to test this stuff before distributing it to the public? You don’t lie about your ingredients in a food product you’re trying to distribute to the public. Period. There’s so many errors on the nutrition facts and just things that don’t make sense. MatPat and StephPat even said it was “acceptable” soooo…yeah. 😂 On a different note, Oli’s art on the fridge is so cute!

Honestly, the whole pink sauce thing just… it kinda makes me shake my head. It’d be one thing if you made something you thought tasted good, and wanted to share it with others. But it’s another to cut corners, and push out a product that is both vaguely described, and actually unsafe according to the FDA. If you care about something enough, wouldn’t you wanna put the time and effort into making it, and making it properly? Something tells me she doesn’t really care about the *product* , she cares more about the brand.
