I've met African missionaries who lived in places where natives could eat elephant, and they have claimed that the trunk meat was excellent. One told me about when he was a child that his missionary father would get trunk steaks from villagers, and he said it would be a round steak the size of the plate, but with two holes, where his mother would put the sides (e.g., mashed potatoes and peas)!

Based on your deductive descriptions of likely flavor elements, Id bet Mammoth would be mos similar in flavor to wild boar...which is rich, earthy, and so pungent that even frozen boar meat will scent up your freezer. Also delicious.

Oh hey, I just did a report on this for a biotech class. Funny to see food theory talk about it. Its crazy how this process works, infact the company that made the meatball actually said they planned to clone dodo meat, but we haven't sequenced the genome properly yet

The fun thing with dodo meat, according to sailers logs, the dodo wasn't particularly tasty, they were just tame and uncaring, so it was easy to keep them on ships, and they were used as a dipping meat to extend the flavour of turtle!

Food Theory Idea: Does thinking of food you like actually make you more hungry? (even after you eat) This might also explain why kids suddenly get more hungry if they are offered dessert after not finishing their food.

i can awnser that for you. yes yes it does. 99% of the time you are hungry you are not even hungry your body is just use to eating around that time so it prepares itself by making you carve food. that's why if you start skipping meals you stop being hungry around those times. so thinking of food makes you crave it and craving it is something allot of people think is being hungry. i practice skipping meals allot as my diet and i can tell you that thinking of food has a major impact on how hungry you get and how much you crave it. :)

As someone who's currently doing research on all various types of oxygen transport proteins, I can say the stuff about heme groups, hemoglobin, and myoglobin was absolutely on point, although right now I'm much more interested in hemocyanin. It felt pretty wild to actually already expect a lot of what was coming up in a science based theory, great feeling.

Honestly, given how it’s lab grown, the meat would be as tender as veal is compared to beef. And the flavor profile sounds amazing…. Having had all the animals listed (except elephant), I’d love mammoth meatballs in the freezer section of my supermarket 😸

Being lab grown, it's also full of antibiotics (as there is no immune system to keep it "healthy" for the time needed to "make" enough meat). And most lab antibiotics are really powerful but would be quite dangerous to eat (I don't think the heat from cooking would sanitize it).

I am a bit confused that Bison was not brought up for meat comparison. Moderately gamey, very lean, and typically served as a ground version (Ground beef or straight up patties). These were solid comparisons, but this was where my brain went first

Having lived in Africa, in areas where elephants are overpopulated I have tried elephant meat and can confirm that it is very gamey and quite tough. Personally I wouldn't recommend it unless you had no other option and the people I know do only eat it when there is no other food available. Disclaimer: the elephant died from a collision with a train near hwange national park in Zimbabwe and was given to national park staff for rations (very common practice there). I was working there at the time, was given a sandwich and when asked was told that it was elephant.

You want a fun meatball recipe, prepare something like your average meatloaf, press it over a large bowl so it takes the round shape, fill it with cooked spaghetti and sauce, then slap that onto a baking tray with another layer of meat and seal in your spaghetti. Now bake it. You'll end up with what is basically inverted spaghetti and meatballs. Slice it up like a pie and serve. Its a great option to share at a family get together as I guarantee no one would ever have had one before.

can you do a topic on "healthy bars": I'm eating 2 Nesquik bars a day each having Calcium, Iron, Vitamins, acids etc. considering they have glucose and sugar which accelerate our digestive process, 1) how much of the healthy stuff is our body actually getting? 2) does eating a meal before / after influence how much we're absorbing? 3) is there a true "healty bar"? 4) cost/ health goodies ratio

I would actually love a Food Theory episode about lab-grown meat. It was all I could think about watching this video. Like how viable is this as an alternative for eating live animals? Environmental and economical impact? Effect on the future of the farming industry? Nutritional pros and cons? Dangers? So many questions!

Another neat thing that can work for tenderizing meat, just leave a slab of it in buttermilk for a week, it'll tenderize the meat without spoiling (obviously leave refrigerated)
