Chef John, I have only made 3 or 4 of your dishes and the sweet potatoes and black bean chili was my favorite. Honestly I just watch your videos because I love food and you are so enjoyable to watch. You have a soothing sound to your voice that makes it easy to do so. Thanks for all the years of content. Does anyone else watch for the same reasons as me? The only other person that has done this for me is Alton Brown and I watched every episode of Good Eats and purchased his books. I wanted to be a cook growing up, but it didn't pan out. I am 30 now and I just wanted to let you know, you have the best cooking content I have seen on KZbin.

Made this today for myself and my girlfriend with raspberry chocolate, and it was phenomenal. Sadly I didn't have ceramic ramekins just lying around, so I had to use glass. However, it turned out delicious nonetheless. Just didn't rise quite as high. But still, utterly perfect. Thanks for another amazing recipe.

What "chocolate delivery systems" do you prefer? Fedex, UPS, Cruise Missile? I personally prefer the Ballistic for my ldr as it cuts out the middle man, but still has that big impact of a Cruise.

Why does Chef John use a roux for the chocolate base? I thought a roux was supposed to a thickener for sauces, etc. and a souffle is supposed to be light and airy. Wouldn't a roux work against the whipped egg whites in terms of texture?
