I love Indian cuisine - it's probably one of my favorites. Aloo Gobhi is my favorite. I've always wanted to try cooking it for myself, but cooking Indian seems so intimidating, but, you and your mother made this look really achievable for someone who has never cooked anything other and American style cuisine. I practically lived on alu gobhi and chapatis when I travelled through Pakistan and northern India many years ago. Always eating in the street 'cafes', because it was cheaper, and so delicious. I've often ordered it in the Indian restaurants here in the UK over the years, but rarely do they capture the taste/my memory of what I ate on my travels. Thanks for this, I'll be trying it out soon.

Love the season with your mom! My husband is Indian and 76. He grew up in New Delhi area. I have your cookbooks and cook from them but loves the traditional recipes he grew up with. Brought tears to my eyes watching the two of you team up in the kitchen, as my Mum & I used to do; in better days when my Mum still had good health and mobility. Alas, no more as my Mum is no longer able to do any domestic work owing to her various health issues and fading memory. This is one dish I have to order at every Indian restaurant, along with Saag Paneer and Chicken Korma. I haven’t looked to see if you’ve made a Korma video and I’d like to request it if you haven’t. I lost the written recipe I had years ago which used way more cashews than just the dozen called for in most recipes. I’m not sure which region it was from but I’d swear it also used coconut milk AND yogurt. If that’s impossible than it was coconut milk. Thanks so much!

You are so lucky to have your Mum showing you how she cooks. My Mum was Jamaican and refused point blank to allow me in the kitchen 😭 She was also a trained seamtress and wouldn't teach me to sew. I've learnt to cook Jamaican food, via KZbin and recipe books. I've also learnt to sew via KZbin, books and courses. Thank your Mum for me xx

This brings me back to my childhood in Heston in the 1970's. I had a lot of Indian classmates and every time I'd play at my friends houses a mother or grandmother would be cooking and stuffing us full with snacks and food. ❤ I was born a foodie, and this specially sparked my interest in cooking. Hanging over the pots, watching what went in, tasting and just enjoying all the lovely smells. *Chefs kiss* We still have our neighbours family recipe for curry powder. ❤

How long do you think that chopped ginger and garlic would last in the fridge? I usually make a paste with a bit of salt, turmeric, oil and vinegar and it lasts forever. I find this a nice idea, but I don't use it that often so I am worried it might go bad before I use it up.

@@hennam now when you mention it, I remember somebody making ginger ice cubes. More ginger than water in it of course and what was cool about it (apart from the ice) was that it was already portioned.
