Chetna, I made this today and it was wonderful. I think I have made more of your recipes in the last two weeks than anyone else’s. Your Palak Chole, my word is amazing your Sabzi’s are a delight. I wish you were available to me when I first became a Vegan and was struggling with simple, flavorful alternatives. Your entire 20 min series (more like 30 at times 😊) are brilliant. Well, I promised I’d report back on trying this recipe, and I should say what good ‘un it is. The only adjustment I made was to add butternut squash to make is a bit more substantial, and I throttled back a bit on the chilli. But it worked! It’s going into our list of regulars. I made this tonight and we really enjoyed the result. We are in NZ and not everything is available to us in the ‘correct’ format so we did some substitutes…. fresh tumeric instead of powdered, fenugreek seed instead of leaves and oven dried tomatoes instead of paste but it tasted wonderful. I can add by saying that I try to incorporate good ideas into other dishes such as how you cooked the joins and then blended them with herbs and spices, this can be used as a base for so many other dishes as Broccoli Bake or the sauce over Brutish kids😂. This is going on this weeks menu. Can’t wait. The only way to eat cauliflower is in a curry, but sometimes aloo gobi gets a bit boring so nice to have an alternate cauliflower recipe without the starchy potato. Thank you.

Only way to eat cauli? Also fab is a layer of seasoned, cooked macaroni in a deep dish, then oven-baked mixed cauliflower and chopped onions/leeks on top (all "al dente")-pour over copious medium-runny cheese sauce, breadcrumb topping, a few tomato slices on top, into hot oven, about 15-20 mins... yum! Very adaptable.

If you slightly blanch the cauliflower first it helps. Looks so delicious!
