I've tried so many recipes for brioche, but yours is easily the best, in part because you give such detailed instruction and include the weight of everything in grams, including the weight of the eggs, something I've never encountered in any other recipe for brioche. It makes a difference. This recipe embodies the perfect brioche of my dreams, and is very similar to one Martha Stewart swooned over at Benoit in NYC on an episode of "The Best Thing I Ever Ate." That one was light and airy like cotton candy, and your recipe is the same. Like Benoit's, this one has a beautiful crust and a sweetness level that's perfectly balanced. This brioche has a great taste and a wonderful texture , and, it's simple to make, letting a stand mixer do all the work. I can't recommend this recipe highly enough for all lovers of brioche. This is THE ONE - Kudos to The apron!

@ One thing I forgot to mention: I’ve tried Martha Stewart’s own recipe for brioche and yours beats hers. The one change I did make to your recipe to make it look more like the one featured in the TV show was to divide the dough into eight small rolls rather than six as you did. I then pulled each one apart rather than slicing it up because that’s how I prefer to have brioche. Again, thanks for helping me to end my search for the perfect brioche recipe. I’ve found it!

I makd thd dough, let it rise, knock it back and put in the fridge overnight. It makes it much easier to work with when its cold-- less sticky.

I have The Bread Baker's Apprentice by Peter Rhinehart. It helped me understand the bread baker's mindset and explained the need for formulas. Your recipe and tips inspired me to put the sponge in the fridge last night. It feels different in my hands than any bread I've made. I'd previously made the poor man's version from the book (there were three versions based on the amount of enrichments used), probably due to my naturally frugal nature. I look forward to baking this one off after the last rise. Okay, it's out. Fear of overbaking, I took it out after 31 minutes. and cut the oven off. After ogling it for a few moments I wondered if it was the right temperature internally but that info is not included here, so I went googling. My thermometer read 188 F. That's close to the ideal temp of 190-195. So we'll see what that temp relates to when I cut it open and slather it with all kinds of goodies. Cheers folks.

Thank you for trying the recipe! Dense brioche could be due to a few reasons: 1-Use the mixer on low to medium speed. Over-mixing on high speed can cause the dough to overheat and compromise its structure. 2-Always Add the softened butter gradually during kneading to ensure it’s fully absorbed. 3-Even though you’re weighing your flour, it’s important not to add extra flour during mixing or kneading. The dough should be soft, slightly sticky, and elastic. 4-Brioche dough needs to rise fully to achieve that airy texture. If the room is too cold, the dough may not proof well. The most likely reason for dense brioche is insufficient gluten development during kneading or underproofing. Even if the recipe is followed closely, brioche dough requires proper kneading until it passes the windowpane test and sufficient time to proof (double in size) in a warm environment.(not cold and not hot environment) Let me know if these tips help!
