For anybody who's interested, here's a website that sells a "fromage blanc" starter: cheesemaking.com/products/fromage-blanc-cheese-making-recipe I think if I were to use Greek yogurt for this recipe, I would drain it over cheesecloth first. At least a little.

I just tried your recipe. The flavor is wonderful but I had some trouble baking it. Do you use convection baking? I used regular baking and I wonder if that's the difference. I don't recall any mention of a preferred method in the video.

Yes, it would. I don't know what it is called in the rest of the world, but in Holland we call it '123-dough' because of the ratio of sugar, butter and flour. It has a lot of variations depending on what you exactly want. If you leave out the egg, you will get a more sandy type of result and so on. There is a whole world of pastry waiting for you to explore, and maybe I'll fucking join.

We went to a French Provençal restaurant last weekend, and for dessert had the most amazing creamy cheesecake. It was baked, but not as dense as a traditional cheesecake. those springform pans aren't sealed so if you pour water into the pan with them it will get your cake wet

I used to baby sit for my sister's friend. She always made this spinach dip and a sour cream cheesecake that i loved. The cheesecake was always so light compared to regular cheese cake. I wonder if that is similar to this? And when you said you weren't making a graham cracker crust i figured it would be a butter cookie crust which has me thinking pecan sandes or just plain sandes would make an awesome cheesecake crust.
