I just tested this recipe, some things I noticed: -The textual recipe is different from the vide recipe. I went for the textual recipe (more sugar and butter) because 100g sugar seems a little bit to little for 200 ml lemon juice -Everything else is straight forward, but don't try to whisk this mixture by hand until thick. I started by hand as shown in the video. But quickly changed and used a electric mixer. The electric mixer needed more than 10 minutes to get it thick. I would have taken me over half an hour by hand. I think this has to do with the absence of real measuring. 4 egg yolks and 4 eggs says absolutely nothing. Pastery needs to be measured. A big egg could have double the mass of a small egg. Maybe if my eggs were thicker, the whisking would be quicker. Tip to tasty: Use real measurements, 100g egg yolks etc. -Be sure to stay with the over, it burns really quickly! I'm going to taste the result this afternoon.

It's just lemon curd (but i think you know), so you can just buy some and warm it up. I see different problem in this recipe but that's because i'm french. Should be really good anyway, hope so

Sure, you could try this : First : make your dough yourself, i don't know how do you call it in english but in french it's "pâte sablé". I recommend the recipe of Philippe Conticini, a french pastry chef. Second : There is different way of making the """lemon cream""", the one i prefer is the lemon curd, which i make myself. Pretty long, but the problem with industrial lemon curd is that they are (for those i tested) way way too sweet, and you don't feel the acidity of the lemon. For me the most difficult part and the most important of a good lemon tart is the lemon curd, because you need to get the taste of the lemon, but not too much acidity. That's why the third step is pretty safe in this way. Third : Meringue. Meringue on a lemon tart is pretty good because it allow you to "cut" the sweetness of your lemon curd, and to just taste the lemon, meringue and lemon goes very well together Hope my english was not horrible!

This recipe is the same but with customary units: 1 cup (250 ml) freshly-squeezed lemon juice grated zest of two lemons, preferably unsprayed 3/4 cup (150 g) sugar 12 tablespoons (170 g) butter, salted or unsalted, cut into cubes 4 large eggs 4 large egg yolks One pre-baked 9-inch (23 cm) tart shell You have to stir the filling constantly, or the egg will start to cook. You can do it in the saucepan but turn the heat down really low. Strain it after so you can get any pieces of cooked egg out. This turned out really good, I like it tart but you can add more sugar and taste it if you like it sweeter.

Made it. And it actually turned out really good. Just a little advice. If you want to make this, look at the instructions in the description, not the one in the video. They messed up one of the measurements (I think it was the butter). It asks for way less in the video. The one in the description is correct. Also, it took longer then 6 minutes to bake in the oven. Other than that it turned out pretty good

Ugh same here , 6 minutes for me was way underbaked, ended up putting it back in for another 5 minutes and it’s still lightly liquity. Maybe 170g butter is the right measurement after all

This will be very sour, not just because of the crack, but 200ml of lemon juice is about 5 juicy lemons, and the 100g of sugar is not enough, also, it may be very liquid-y, 200ml liquid versus eggs that could be too small, now another suggestion i have is when you are done with getting the curd, strain it, and you will get a velvety smooth texture.

I haven't used a bain marie before so was unsure how hot the water needed to be. I found that the mixture only thickened when I got the water to boil or near boiling. And I used the measurements written under the video rather than the ones stated by the video itself. Mine turned out too sweet and too sloppy. Wasted 8 eggs.

@Simply Maple It turns out that you are right. They weren't wasted becsuse I put it back in the oven for a while and it eventually set enough to eat it. It was even better the next day. I did mess up, yes. By following the wrong one of the two recipes given and by not boiling the water as shown in the video.

something's off with the quantities one thing is for sure: needs way more sugar. Use an electric mixer and if it doesn't start to thicken maybe your water isn't hot enough(that was my problem) If you're inexperienced like me, this recipe is not for you, it needs alot of adjusting, you can't just folow the receipe and get a good result
