Albert, I love your recipes, especially as I have a vegetable garden and grow most of the basic ingredients. You absolutely must print your recipes in book form, ideally spiral bound with a recipe on each page, and perhaps a link to you making the dish on KZbin. I and many others would buy it instantly!

Eggplant is MY favorite veggie but my family always hated it. Then, we watched Eva and Harper over at PadtaGrammar. Their eggplant video won them over. We now eat eggplant twice weekly!!! Me too, Amy - love eggplant, so versatile and delicious! Albert's version is typical of his recipes -- he always respects the natural flavors of the ingredients themselves. His preferred seasonings are always very simple - just Spanish paprika, salt and pepper in many recipes - so the seasonings never overpower the main flavors of the dish. He's my new favorite KZbin chef! 💖👍

Whoah, I’m from Baltimore & lived in Georgetown, DC for a while... mind blown that you’re using oil from my old stomping, I mean cooking, grounds. From the thumbnail I expected the eggplant to be crusted in Manchego, but thanks for reminding me to get some paprika next time I’m out.

We always end up with an abundance of Eggplant when we only plant 2-3 seedlings so I love to see a new way of using them in a dish. Thankyou Albert- Loved this one. Also thanks for including a photo in the printed recipes- that has been great!

I have made this recipe last night for dinner and it was an absolute delight. Rincing the eggplants is a VERY important step that cannot be skipped. I mention this because a few days ago I have made the recipe in EPISODE 584 - How to Make Spanish Vinegar & Garlic Zucchini, I didn't rince the eggplants (because Albert didn't say to do so !) and it ended up way way way too salty. Albert thank you for mentioning it this time, it is very important ! Much love.

How amazing ! Ive always loved fried eggplant, but I wished it werent so mushy. I was surprised to see how you keep that from happening . What a delight, it came out nice and firm . Great ! The tomato sauce is delicious yet so simple. Love it all !

Not to mention, a lot less fattening! (Don't get me wrong, I love Eggplant P, but this beautiful dish is much lighter and perfect for summertime, when you don't want to be heating up your kitchen with the oven.)

I made this today for dinner it was delicious. I did veer slightly from the recipe by adding a thin slice of mozzarella to the top of each slice of eggplant when heating through and popped it under the grill for a couple of minutes to melt the cheese. Beautiful served with a piece of chicken and a slice of crusty bread to mop up the sauce.

You could try aquafaba, the liquid from garbanzo beans. You could whip it into a more egg like consistency before using.

looks good; not being a fan of green capsicum, I would replace it with a mix of roasted (and peeled) red (or orange) capsicum and some finely chopped chilies, probably a Serrano. I cannot decide what to serve it with but probably some freshly baked, crusty bread.

I absolutely love eggplant but cannot eat bell peppers. What might be a good substitute? This recipe, as with all of your recipes, looks delicious.

You could try cherry peppers or poblano peppers but poblanos are Mild chili peppers if you dont mind the heat. Italian Frying peppers are mildly spicy too. Or cubanelles they dont have heat ...hope This helps

Perhaps try substituting diced celery. Use a bit less of the celery (than you would have used of bell peppers).

I'm sorry, but I would have to melt some manchego over the top of that LOL. Also, I find green peppers quite acidic and would probably use red instead. Another lovely, healthy recipe!

Don't salt it and use canned tomatoes. The flouring and eggs don;t take long if you lay everything out before. Good luck.

If I we’re going to try a substitute, I’d use a chickpea flour egg (equal parts chickpea flour and water plus a bit of oil, allowed to sit for a couple minutes).

Too many paper towels is not ecological! You can pat dry from sweating with a clean dish cloth & just drain on a rack over a dish or pan.
