Fried Garlic Vinaigrette
Yield: 8 oz
Ingredients:
5 large garlic cloves, minced
3-4 tablespoons neutral oil
2 tablespoons granulated sugar
2 tablespoons water
2 tablespoons white distilled vinegar
1 teaspoon fish sauce (or to taste)
1 teaspoon salt
1 teaspoon black pepper
Instructions:
1. Heat a small nonstick skillet over medium heat. Add the minced garlic and fry until it turns a light blonde color. Be careful not to burn the garlic.
2. Strain the garlic, reserving the oil.
3. In a bowl, whisk together the sugar, water, vinegar, fish sauce, salt, black pepper, and the reserved fried garlic oil until the sugar is dissolved.
4. Add the fried garlic to the mixture. Taste and adjust the seasoning to your palate. The vinaigrette should be slightly tangy and savory.
