4 karela (bittermelon)
shrimp.
3 stems scallion
1/2 onion.
5 cloves garlic.
1 wiri wiri pepper. (optional)
1 tomato.
salt to taste.

This reminds me of my mom's cooking. I could never get my karela to be as crispy as the way this looks. I'll try this recipe with a little adjustment from madhurasrecipe. I like the idea of boiling the fruit a little before frying it. This will take away the need for so much salt and oil. Everything else is a go. Thanks for sharing.

Real Guyana was the first to expose the garbage of Guyana, when no one else was brave enough to do so! He personally as a "one-man-show" did it! Guyana has improved tremendously on account of your bravely! I, we, applaud your effort! Maybe, because of your efforts, we have accomplished a lot of knowledge and awareness of of our country's plight and goodness! A salute to you!!!!

Yum we fry it with lots onion, really golden brown without shrimp and eat with roti . Or dhal rice and karela yum .

Yes, but in these dishes the shrimp is added to flavor the main ingredient ,and the best way to do that is to fry it in the beginning with the other seasonings. If you were to add it at the end to just cook the shrimp perfect, then it won't have the same effect to flavor the Main ingredient.You might as well cook them separately. 🙂

ok got your point but would it be best to use dried shrimp instead since it is just for flavor? I love your videos but your response is implying that the raw shrimp is just for flavor and not for consumption. Ken definitely 28 mins is too much for cooking shrimp. I suggest you try dry shrimp instead of raw shrimp. Soak the dried shrimp overnight to eliminate the salt and you will be good.

🙂So why would you use a more costly shrimp for the dish when the readily available fresh as it gets and cheaper shrimp is available. Not forgetting with the dry shrimp you have to soak it from before ? OVERCOOKING SHRIMP, applies to Shrimp dishes only where SHRIMP IS THE MAIN OR ONLY INGREDIENT, AND LARGE SHRIMP MAINLY. This is the traditional way these dishes are cooked, These are small shrimp and is very tasty at the end of these dishes.one of the reasons being that the shrimp is being cooked in the juices of the main ingredient here, and never dries out. These shrimp are so small ( and tasty) you probably won't be able to tell if they are overcooked or not. They really taste great, YOU should TRY IT though, and give your feedback🙂

So why would the shrimp be added to the dish if it was not for consumption? do you remove the onions from your dish after you have flavored it with the onions, no, I didn't think so. What you are saying does not make any sense. Dried shrimp being the best is your opinion, what I have stated is the fact, if it was not, every Guyanese would not have been cooking the same way, simple.

Love love karela,but I am allergic to shrimp.I get big hives.But I had with shrimp before and it taste so good.Same with seime ochroes and pumpkin.Also allergic to pumpkin all the nice things
