So I used to work at Tyson's in Kansas, and we made all of the tacos for Jack in The Box. It's actually pretty healthy. They brought in beef from a butcher and then added spices. The tortillas were made from some little old ladies in the back, and they come out on a conveyor belt, and a machine would drop a certain amount of cooked meat on the tortillas, and they would fold.

I'm from Dallas Texas and my mom has always made tacos this way but a couple things she does different is in stead of adding the masa she mixes refried beans in with the meat to make it stick together in the oil. she also closes hers up with tooth picks before frying just to make sure you don't lose any filling while frying. these tacos are so good though and while I love soft tacos (because Texas so real tacos lol) these will always hold a special place in my heart and feel like home.

Just a suggestion; If you brown your ground beef first before all the wet ingredients, you will have added an extra layer of flavor, then after browning add all your yummy wet ingredients to take it over the top.

Fried tacos are super popular in AZ. Haven't found anywhere in TX that does em right. BTW, after you stuff em but before you chill em, run a tooth pick through the top to hold em together. I use shredded beef and cheddar.

Before Taco Bell these were the only Taco's I knew. My dad made them this way but he used shredded beef instead of ground beef. Better with the shredded beef but still great with the ground. Far better than the shingle filled with beef you get today.

Here In Oklahoma it's spread raw hamburger with salt and pepper in half the shell, fold and dip fold in hot oil them fry meat side up, this finishes the fold. Drain then put in a deep baking dish with cover in layers of paper towels and put in oven at about 200 f for 10-15 minuted. They steam. Fill with lettuce and tomato with green onion. Slather in cheese wiz before you stuff. Then some worcestershire sauce. Sis pours on wishbone italian dressing for another kick, she's weird.. I'm a purist. I've crunched through eight to ten of them in a sitting. Bout twice a year. I miss yellow corn larger enchilada and burrito tortillas. Make big ones less work. Then you eat 3-4 Like a Big Freaking taco size. Then you go to the 50 cent car wash and spray yourself off. Coma sets in.

in some parts of Mexico they don't open the taco after frying. they put the toppings on top of the shell. sorta like a half stuffed tostada (aka: chalupa, tapatia etc.)

Tomato paste in a tube for cheapskates like me: can of paste, fill a baggie with it and close up the bag, cut a corner off & squeeze out paste as you need it. To save, I fold up the corner & put the whole bag in a jar (to be on the safe side).
