I tried making this for Father's day tomorrow and I thought I messed up but it turned out AMAZING. WOW im so impressed. I added a little bit of lime juice and zest to the custard and it rlly turned out good! Thank you so much!

Honest Review: I definitely recommend this recipe!! As a casual baker (I sometimes search for recipe and try baking them lol), this is one of the best recipe I tried as I always struggle to choose recipe because I sometimes fails. The tart shells' quality is like the ones you will eat in the bakery and the custard is good too. My own mistake was making the shells too thick so the sides were pretty brown but the middle was a bit undercooked, so make sure you don't do the same. It's a must to try this recipe!!

I've used this recipe twice before and it works really great! I wonder if the custard will work the same if you substitute the whole milk with almond milk.

Hi! Can i know how you store them the completed tarts? Or we have to eat it straight away? Coz i made this earlier on, and i stored it in room temp. The next day, the crust became really soft! Any idea to avoid this?

Hi Zong han, i tried making the tarts with the measurements that you have given. The pastry cream(custard) came our really well, but the problem is with the tart shell. First problem is that the shell becomes thin and shrinks quiet a lot in the case, so the wall is not that high. Secondly it is not that soft, it becomes hard. Am I doing something wrong the heat in the oven? Pls help. :-)

Rongdhonu Gaan sounds like you are over-working your dough. Try to only mix it just enough so you don't develop too much gluten! (that's what's making it shrink and hard)

Weigh the entire piece of dough then divide its weight by 12.

No, freezing it is optional but you must refrigerate it before using it

It will loosen up if you beat it and then it will set to be firm again in the fridge

my custard wouldnt thicken 😔 made two batches, first one thickened slightly and the second one was totally liquid

Correct measurements of the ingredients? The flour/cornstarch is there to thicken it up, it should work fine.

You can actually still make but I think you would have to adjust the amount of milk and sugar accordingly. It will not be that rich too.
