Hi. I am facing problems making the pastry crust. I am making 30 tarts and have halved all the ingredients. However, I simply can’t truly achieve the bread crumb consistency (before putting in the egg) like it is shown in your video. My mixture looked slightly crumbly and before I can add in the egg, it became slightly gooey. As a result my dough is not as dry as yours. Instead, mine is wetter and stickier. Hope to find out what could be the reason (my butter is straight out from the fridge), and whether chilling the dough longer/freezing it would help? Thanks for sharing the recipe and I’m really excited and hope to be able to make the tarts like yours.

I made my dough in aircond room too..make sure all ingredients are on the cooler side, and yes you can chill your dough longer, and knead abit before using to soften the dough abit before moulding.may I know your ingredients measurement?

You can sprinkle abit flour on the surface of the dough if the dough is too sticky...

For the custard cream, originally is using white granulated sugar. But for tart shell, best to use icing sugar for better consistency, because if using white granulated sugar, the amount used might be different

Oily? I think your butter dy started to melt due to too hot at kitchen, u can place your dough back to fridge to set awhile then take out to roll. The flour for this crust recipe suppose to be 400g ya?I had made correction at description box below
