Today, I’m making my favorite Finger Desserts for any party! My Mini Fruit Tarts!
So so cute, with fragrant buttery Pastry Crust, rich creamy not too sweet Custard Cream topped with Fresh colorful fruits. Definitely yummy~

b) 8 Egg Yolks

Low Medium Heat 6-7 minutes
=Pastry Crust=
a) 230g Unsalted Butter amzn.to/2BJ4Fyy
b) 50g Shortening amzn.to/2CWCRqo
c) 112g Icing Sugar amzn.to/2DcLRIQ
d) 400g Flour amzn.to/2BJ0uCz
e) ½tsp Salt
f) 1 Egg

Divide dough into 60pcs ball (14g/ball)
Chill in fridge 15minutes
Oven 180C 15-20minutes
=Fruits Toppings=
a) Fresh Strawberries
b) Kiwi
c) Mango

Just tried. The dough followed exactly the amount of ingredients but I yield 600gm in total only, not 850gm like yours. Wonder what's wrong.

Love your recipe, but I was surprised that you use flour for the egg custard. Can you explain why you use flour because most recipes only call for corn flour?

Can use low protein flour too, which also help to stabilize and thickening the custard

Hi Wendy, after brush the crust with egg white no need to rebake ? then after the tarts placed in the fridge , will they still be crispy or not ?

Wendy - just curious why for this fruit tart you don’t use the rolling method and using the mould to create the shape? Also by pricking the holes I don’t need to blind bake with beans/stones etc. Please advise.

Hi Iwen, it took only 3 minutes to thicken despite at low heat probably because of the type of saucepan I used. Would it be ok?

Hi. I am facing problems making the pastry crust. I am making 30 tarts and have halved all the ingredients. However, I simply can’t truly achieve the bread crumb consistency (before putting in the egg) like it is shown in your video. My mixture looked slightly crumbly and before I can add in the egg, it became slightly gooey. As a result my dough is not as dry as yours. Instead, mine is wetter and stickier. Hope to find out what could be the reason (my butter is straight out from the fridge), and whether chilling the dough longer/freezing it would help? Thanks for sharing the recipe and I’m really excited and hope to be able to make the tarts like yours.

I made my dough in aircond room too..make sure all ingredients are on the cooler side, and yes you can chill your dough longer, and knead abit before using to soften the dough abit before moulding.may I know your ingredients measurement?

You can sprinkle abit flour on the surface of the dough if the dough is too sticky...

Thanks a lot for the quick reply. I used half of your ingredients: 115g butter 25g shortening 56g icing sugar 1/4 tsp salt 1/2 egg (I mixed the egg before weighing half out) What would be the impact if I reduce the butter?

Hi Wendy, 请问做饼皮时用的奶油一定要冷不过也要搅拌至creamy 吗?因为我看到蛋挞那个做法是直接把奶油切块然后再慢慢拌成面包碎。

Yes, I kept my fruit tarts in fridge after making...but best eaten after chill for few hours.haha

Great video! Where do you buy your fruit tart molds? I tried looking for them, but the measurements are different and height is only 1/2" and yours is 1 inch. I would like to buy the kind that you have. Please let me know. Thank you

Thanks a lot for watching, means a lot to me.. My exact mould size for top is 2inch Bottom is 1inch Height is near 1inch I bought it from my local ingredients shop...you can find it at amazon online

For the custard cream, originally is using white granulated sugar. But for tart shell, best to use icing sugar for better consistency, because if using white granulated sugar, the amount used might be different

@@phoeliau1998 I recommend you to store them in airtight container to prevent them from soften, then maybe you can keep longer about 5days.. best to use them fresh.haha

可以放冰箱2-3天吧。如果你的挞皮有做到烤热立刻涂蛋白的做到位就没那么容易软。 可是建议要放久,饼皮做好收密封容器室温,就直接要吃时才放custard cream更好吃。 用同样份量牛油代替白油

Oily? I think your butter dy started to melt due to too hot at kitchen, u can place your dough back to fridge to set awhile then take out to roll. The flour for this crust recipe suppose to be 400g ya?I had made correction at description box below

普通冰箱冷藏就好,你的厨房温度高的话 也是很容易让牛油融的,需要放久些,最好开冷气做。
