I was so hungry on the way home from work today, planning to just eat anything I could find when I got home. I have 1 apple, 2 cucumbers, and 1 head of cauliflower and cupboards full of my husband’s junk food. Can’t go shopping until I get paid Friday so I figured it would just be a disaster week. Then I saw your video and took some time looking through the freezer and found several things I had batch prepped and forgotten. Seeing you gave me the time I needed to come up with a better solution. Thank you.

CAULIFLOWER & BROCCOLI CASSEROLE DISH Chop broccoli & cauliflower florets & place them in a large casserole dish. Use a large grater to grate a firm block of tofu. Place the grated tofu on top of the veggies. Prepare the sauce (see below) & pour it on top of the casserole ensuring some of it goes down to the bottom of the dish. Sauce ingredients: Silken tofu, soy milk, juice of a lemon, garlic salt (or garlic/onion powder & salt) & a dash of water if necessary. Blend & then add ~ 1 tbsp of dried dill. (For those of us not crazy about soy any neutral-tasting white bean could be substituted & any non-dairy milk.) Place the casserole in a preheated oven. (Did not mention temp or time but she usually bakes at 180C/350F until veggies are cooked and the top is slightly browned.)

I mix my diced potatos in a bowl w/sweet chili sauce -- I love it. Doesn't need a lot, but it's sticky and spices stick to my potatoes with it.

Amy you are amazing!! I add beans to everything I eat. I make a chocolate pudding with sweet potatoes and black beans to nosh on in the evening when I need something sweet. I cook a huge pot of soup every week year around for one of my meals (whether it be breakfast, lunch or dinner) and always have a HUGE salad everyday. Eat the Rainbow!! I'm SOS free and have lost 45 lbs over the last 9 months! I was eating too much vegan junk food. I went totally whole foods last January.

The potatoe wrap looks amazing. An aquafaba wash might help hold the potatoes together. I always place something called a Grip liner cut to size in the bottom of my pots and pan so they don't get scratched when stacked inside each other. I think the brand I used was Duck. It comes in rolls you cut to whatever size or shape you need.

Loved the cauliflower/broccoli dish. When making that style of sauce I use a mix of tofu and steamed cauliflower so a double tofu and cauliflower moment 😂😂😂

I do wish we could get soy yoghurt here in New Zealand. The only kind made here is coconut yoghurt. It just makes everything taste of coconut and it’s very high in fat. I’ve tried making soy yoghurt but I haven’t had much success.

Yes you can get fatter indeed. I had 50 lbs seven years ago, and the second year after losing it all, it began to creep on as I was eating too many carbs. I lowered my carbs and added more veggies and proteins, and here i am 7 years on, still not put any on. I think Amy does put weight on and then lowers her intake as she has in previous videos.

If you use silken tofu by the brand Clearspring, it is organic and GMO free - and is readily found here in the UK in Sainsburys, Asda, Waitrose, health food shops and online.

@Amelia-qm6bk If you google 'Is organic silken tofu GMO free' it comes up with a descriptive answer online that will help you - it references Mori Nu and Clearspring. Whilst it might not list this info on their packaging, these brands are GMO free. I always google to double- check things like this - as rightly or wrongly, not all products declare if they're GMO free on their packaging, even if they are. I stocked up on my Clearspring today - I find it to be the best textured silken tofu available here in the UK 👍

I’m not intending to be mean, or rude, so please don’t interpret this that way. However, as lovely as your wooden plates and bowls are, please wash anything new before using it. I only noticed because your price labels on the plate haven’t been exposed to water. I’ve worked in manufacturing. You definitely need to wash anything you’ve bought, even brand new.
