I'm a chef, and my mother-in-law texted me after she watched this scene, and she was wondering why Sydney whisked the eggs through a mesh strainer. I explained that it removes any unwanted solids and makes the omelet smoother. I just love how much this show gets people interested in cooking, and excited about food!

I've made this omelet for myself and others since seeing this episode and everyone raves about it. It truly is amazing. Boursin is hella expensive, though, so I make my own herb cheese using cream cheese, butter, garlic, and herbs. And yes, you are right -- that "goo" that's left in the strainer after the rest goes through? I guess that's what makes bowl-whisked eggs rubbery. Because this omelet comes out perfect every time as long as you leave the top a bit runny. And I am just a home cook.

What I love about this scene, and this is probably self-intuitive to most people, is that Sydney's making food *for* someone else, after spending most of the season making food for the restaurant (to be served to other people, granted, but the whole coming up with dishes thing is about servicing a broader palette). And with Carmy's absence, I imagine her confidence might have taken a stumble since she was shown being disgusted at the taste of all the fancy dishes she was coming up with. But Natalie just wants an omelet, Sydney zhuzhes it up a bit using her expertise, and Natalie loves it. Kind of a reminder for Sydney of why chefs do this, similar to Richie's epiphany. (Also, the use of an omelet since that's a chef test in a lot of kitchens.)

Omelets are a test for chefs because they're easy to make, but hard to master and any chef worth a lick of salt should be able to cook eggs to perfection.

This scene reminds me a lot of the cheeseburger scene in The Menu, when Margo asks tells chef she’s bored with his highbrow artistic dishes & wants something real and asks Chef Julian for a cheeseburger…both Sydney and Julian are providing someone with the basic luxury of food that makes them feel satisfied and happy and in doing so reminded of why they love their profession in the first place

I'm reminded of something my dad did for me a few weeks back - I'm coming to the end of my first trimester with my second child, and I had just told him and my mom that we were expecting again. I mentioned how rough things had been on my stomach, and he asked, "Do you want me to slice an apple for you, like old times?" And even if he wasn't cooking, I just felt so much support and love in that moment. The apple pieces were delicious!

There's something about food prepared by someone you love....even something as simple as an apple. My mother used to say that she always enjoyed coffee more when I made it for her. She would always sip out of my cup of coffee when we were out at a restaurant too! It'sa good reminder to cherish those moments!❤

I finally did it boys, I finally bought the ingredients to make this omelette and omgggg it is heavenly. 100% would recommend. The crisps with the creamy egg is such a surprising taste If anyone's interested, you only need eggs, chives, borsian cheese and butter. I also added mozzarella and spinach to mine cos I need more greens and love mozzarella But ever since this episode came out, I really wanted to try it. You don't need to be the best cook to pull it off so would definitely recommend

The more patient you are cooking the eggs the more moist and tender they will be. Avoid any browning at all which will detract from the fresh egg flavor and aroma. Spot on with the butter. If unsure, add more butter.

I’ve made this omelette at least a dozen times in the past week for myself and various family members. It’s so easy and delicious. Straining the eggs makes them so light you feel like you hardly ate anything. Not your average heavy greasy diner brick of eggs.
