The weather's gotten chilly lately.
This the perfect time for galchi-jjigae!
Today, I'm showing you how to make tender galchi-jorim without any fishy smell!
[Ingredients]
1 hairtail (3-4 portions)
1/3 radish (400g)
1 sheet of kelp (10g)
1 handful dried shiitake mushrooms (15g)
1 stalk of green onion (100g)
2 green chili peppers and 2 red chili peppers
1/2 onion (120g)
[Seasoning Ingredients]
1/2 cup water (100g)
4 tbsp light soy sauce (60g)
3 tbsp coarse red pepper flakes (15g)
1 tbsp minced garlic (12g)
1/4 tbsp minced ginger (3g)
1 tbsp sugar or 2 tbsp corn syrup
1 tbsp perilla oil
[Process]
1. Cook the radish first.
2. Prepare the hairtail carefully to avoid any fishy smell.
3. Prepare the rest of the ingredients.
4. Make the seasoning.
5. Once the radish is about 80% cooked, remove the kelp, and add the remaining ingredients, hairtail, and the seasoning.
6. Cook quickly for about 10 minutes.
7. Finish off by adding 1 tbsp of perilla oil.
