My take on the religion of the seven not seeming to have any tangible supernatural connection to a 'real god' is that it's meant to represent the political/human side of religion and its power. The seven might not have the ability to conjure shadow monsters, but the actions of their overwhelming amount of believers are just as capable if not more so of influencing the ASOIAF world.

My god, I just realized that the whole lobstered steel and crab dick situation goes way deeper then we thought all along; GRRM revealed another clue in Elden Ring, where you can eat boiled crab and boiled prawn (basiacally just a lobster, right?) and increase your resistance to physical damage. So perhaps the white walkers will really only be defeated by the powers of the sea, which obviously links back to Eurons plot. Maybe, when the dragon maries the kraken, they will have a bunch of seafood-children.
