Great to see this part of Thailand, there have been a lot of problems in this region in the past so many governments recommended that tourists not visit this part of Thailand. I regret not seeing it in any of my previous visits of Thailand. Next time for sure. Once the world starts to go back to normal.

Its the southern Malay giving lotsa issue to the governing Thai. And bear in mind, southern neighbour Malaysia actually helping these thai insurgent in discreet due to shared culture and religion. These Muslim Malays have one thing in common, when they were weak they will be friendly and invite u to govern the country together but when they are strong enough they will demand more. In malaysia they started to demand minorities to respect unnecessary laws, in thailand they now demand independence.

I have been thinking just the same throughout out this “Southern” series. I’ve been to Thailand three times over 15 years and I’ve never seen *anything* about this part of the country, only read brooding warnings about Muslim/Malay separatist violence. I’m from the US, where a mass shooting can and will happen anytime, anywhere. Knowing what I know now frankly, I would feel safer in this “problem” region vs almost anywhere in my home country. I’ve long told anyone who will listen that in a country of largely *very nice* people, Thai Muslim women may be the nicest of all.

The fish sauce is call 'budu'. We tend to eat it with fermented durian (tempoyak) and local salad. Southern Thailand and Kelantan (a state in Malaysia) share this rich food and culture.

This fermented fish sauce in the Philippines, we call this Bagoong isda.. In the northern part of the Philippines we have many dishes that uses bagoong isda especially in cooking vegetables.. We use bagoong isda for our Vegetable Enselada.. thank you bro your so nice

We also have this fermented fish sauce in the phillipines - bagoong. Often used by ilocanos or the people from the northern part of the phils. My mother usually makes this. Home made. I love it soooo much. We use it as an ingredient to a lot of dishes. The aroma is so fishy and it really gives a very unpleasant aroma. That is the very reason why people from other parts ot the phils often look down on ilocanos. But I never heard mark talk abt that odor. Instead, he focused on its rich flavor and umami. He even described it as cheesy. Well, we ILOCANOS are vindicated. Mark, you just put that lowly bagoong on the world stage. THANKS A LOT !!!!!
