I’m American, but my German mother would make this for us, she would cut the potatoes in rounds and leave the skins on, cause of the nutrients from the skin. She also loved the cast-iron skillet for the crispy parts it would create. Delicious! One of the first things I learned how to cook as a little girl by myself. Thank you!!!

Just found this video after having seen many of your excellent videos. I have found that first par-cooking the potatoes in the microwave results in much crispier fried potatoes. First, I cut the potatoes into quarters, without removing the skin, and then cook/steam them in a covered microwave-safe dish for about 1 minute per medium potato. Then, I let them cool a bit and cut into thinner slices for frying in the pan. The microwave step significantly reduces the water content of the potatoes, and they crisp up much better and more quickly.

I love reading the comments from all over the world. Here in Texas that is almost a daily part of one of our meals. It’s so surprising to hear that some people have never had these potatoes. Shocking actually! Lol....I am so glad you shared this video, now some precious people will get to enjoy a delicious way of cooking this vegetable! Which can have many variations. I cook these the same way plus sometimes cut up smoked sausage and throw it in there with the potatoes and onions. Then drain it and sprinkle some cheddar cheese on top...yummy!

I use pre-cooked potatoes (which I usually have in the fridge) and bacon (left over from breakfast when I cooked extra and hid it!), cooks in half the time. Absolutely delicious with hot beetroot and sausages or meatballs. Learned the recipe in Sweden.

Put in some chorizo for a Spanish twist = half a chorizo sausage sliced with outer skin removed for the last 6 minutes and leave out the paprika as there is some in the chorizo è fantastico .

Sounds like a combination that's fairly common in German dishes: Himmel und Erde "Heaven and Earth. Heaven represents apples which grow on trees, and Earth represents potatoes which grow in the ground. Himmel und Erde is an actual dish from the Rheinland, but the combination of apples and potatoes shows up in many German dishes.

My mutter does this with small changes, instead of paprika powder, we add turmeric, and instead of pepper, we add little chilli powder, which is garnished with garlic paste. Salt is ok, and we usually don't add onions, but acceptable if you prefer. Good recipe.

My dad was German, he fried bacon first then added potatoes and caraway seeds. Fried them up and then at the end a scrambled egg over the top and fry and mix until the egg was browned too.. we called it a farmers breakfast and ate it with a squeeze of tomato purée

You are absolutely right. I don't know what the hell she is cooking , but these are no German Bratkartoffel. You will use already cooked potatoes , take skin off, slice them and with a little oil and butter, or clariefied butter, frie them in a skilet. Salt &Pepper.

I've never seen potatoes made like this before. I would always start with the onions + bacon, that's how I learn it at home & in restaurant. And potatos need to be precooked with the skin on it.

I like using the Hungarian Paprika because it seems milder than the regular Spanish type. I use Hungarian P. in my Goulash too. I also use freshly ground white pepper instead of black.

My mom made these. We called them hash browns, though they differ slightly from standard American hashbrowns. She probably learned it from her mother, my grandmother, who learned it from her mother, my greatgrandmother. My entire ancestry is Munster Irish except for my grandmother's father, my greatgrandfather, who emigrated from Stuttgart in Baden Wurtemmburg and married my greatgrandmother, who was Munster Irish (I believe from Tipperary), here in the United States before they moved to California in the 1890's. I assume she learned the dish from him, or through correspondence with his mother back in Stuttgart, and made it to please him. Passed down through the generations to me and beyond. When I grew up in the midwest, it was fried potatoes this, fried potatoes that, all the time, fried potatoes. Sheesh! I couldn't figure it out. Then, fast forward 40 years and I was in the Black Forest (Titisee), Germany for a scientific meeting. I walked around in the little downtown area and damned if almost every other store there had a frying pan in the front that was 2-3 feet in diameter full of freshly fried potatoes and other ingredients. Then I made the connection. My father's ancestors were German.

It's been a long time since I prepared fried potatoes last time, this video reminded me of doing it again someday. :) The variety of recipes for fried potatoes is nearly unlimited in Germany, just like for a Spanish tortilla. I've never washed off the starch and always cut the potatoes into slices instead of dices. Some people cook the popatoes before, others don't, some fry the onions seperately, some add bacon as well, others are using herbs such as marjoram (I recommend this) or rosemary etc. etc.

Very delicious and so simple. It is very similar to our Indian dish 'Aloo ki Bhaji' ( Dry Potato Curry ). It can also be eaten with Rotis ( Indian bread made of wheat flour ).

Most people don´t know. And who cares, we all love them :) The recipe was first created by a cook in royal Prussian kitchen of Frederick the Great :) That´s why their origin is German.

Other than adding some garlic, that's how we do it and we just call them homefries or hash if you add some fried corned beef.. and green onions in it. Sincerely the green onions adds something incredible if you turn this into a corned beef hash. But cook the corned beef separately so you can get it a little crisp on the outside and add it all together afterwards.

I heard that in Asia, they grow rice easier than wheat. Rice is able to feed more people on less land. That is why China and many other Asia countries has more people than their European neighbors. They were able to sustain their population with rice rather than wheat and potatoes. So you Asians many have the better agricultural land.

In Japan potatoes are expensive and not often eaten. Hokkaido potatoes are sent to friends/family in other parts of the country as gifts.

This is very similar to the way we make 'home fries' in New York, but I can see some major differences in technique. This is definitely worth trying. (I tend to burn my onions, this looks to be superior. By the way, I absolutely adore your voice!

@@sujayakv5452 germans eat a lot of meat.. so as mentioned before those fried potatoes go with a lot of different meats.. things like pork cutlets (in germany we eat a lot of pork) or basically any kind of roasted meat.. for example some roasted or fried chicken.. you could also say: if a dish works with french fries it most likely will also work with these kind of fried potatoes .. we probaly would not add them to rice and curry tho, because we would consider rice + curry a complete meal already ;)

@@crappiefisher1331 interesting after I saw many other German recipes I realised the way they served so the next time I prepared I served it schnitzel and my family loved it Here I India we prepare some kind of curry it could be lentil beans pulses some kind of vegetarian protein and rice and three vegetable sides so just Curry and rice isn't enough for us we serve different kinds vegetable sides that's when I had prepared these (that was first time)

I fry thinly sliced Yukon Gold potatoes in oil only, over high heat in a large nonstick skillet. For at least three or four minutes, I leave the potatoes alone in order to develop a golden brown crust. At this point I stir up the potatoes, lower the heat, season to my liking and cover the pan to soften the potatoes. Butter is added during the last few minutes of cooking.

I tried this two weeks ago, it did not end well. I did the potato's fine, chopped the onion and started to cook the spud's, I thought while waiting to clear up some of the mess, not only did I clear the spud peelings and the onion waste, I also threw away the chopped onion, I can remember looking at the chopping board thinking "where the hell is my onion" when I needed to add it. I did follow through the recipe for all the other bits and pieces, but it did lack something. Next time I will do it right, I am sure I had this while serving in the armed forces in Germany at a restaurant, it is also part of a meal my mother used to do many years ago and it is something I do now. Bombay potato's, I also cook chicken in the mix with peas and peppers, a meal in one.

I have been making German Fried Potatoes for 35 years. I do it a little different but basically the same. I use cast iron skillet 10". One whole onion chopped up well and taters chopped into 3/4"-1" pieces. Cutting enough taters to fill pan with onions added from the beginning. I use 1&1/2 cubes of real butter cut into 1/2' slices which is also added from the beginning. I mix it all together, cover and cook on low heat ( like on about 2 ) for a little over an hour ( stirring about every 10 min. I start adding salt and pepper after a half hour of cooking. When they start browning up well you won't even see the onions anymore. When done after about 75 min remove cover and brown them a little more to suit your taste. Best fried potatoes you will ever eat in your life. I cooked some at a camp out one time and my friend said her kids won't eat onions. I told her I'm not making some without onions for them and they probably won't even know there are onions in there if you don't tell them. Her little girl told her they were the best potatoes she ever tasted. Her mom told her to me that and she said " I'm not going to him that ! " But her mom told me what she said...LOL. Remember this.....Cast iron skillet browns the taters up better than other pans. In say a faberware skillet they don't get as crispy but they still taste great.
