Yes appreciate the sound of silence. I watch another couple, and they’re really nice and fun to watch, however, I can hardly take the music, not my kind of music and way too loud. It hasn’t steered me away from them, but I sure appreciate very soft music or none at all! Thanks Becky for all that you teach us. So enjoyable, and I’m almost 73 and I’m still learning and to boot from a very young cook which delights me to no end, lol. Take care.

I can't thank you enough for always bringing wonderful and useful content. I am a married working mamma and I've always wanted to make food from scratch for my family, but I never thought that I had the ability or the time. This weekend I made bread, pasta, and chicken & dumpling soup all from scratch. My husband loved every bit of what I made and I almost burst into tears as he told me how good everything taste. Your videos are so empowering and easy to follow. We currently live on about 2 acres and I'm so inspired to start a garden and to start canning and bulk cooking. Please keep your wonderful content going I'm so blessed to have found your channel 😊

You can steep those strawberry tops in white vinegar to make a lovely infused vinegar for salads and marinades. Delish!

One of my favorite ways to preserve green beans is by salting. To make, I layer Frenched/split Green beans in salt. A plastic ice cream container works great. I tuck it into the back of the fridge and take out a bit at a time as I need them. They keep at least 3 to 4 months that way and I prefer them to canned or frozen green beans. To use them, you rinse off the excess salt and soak in water to 30 minutes. When added to soups, stews & casseroles, they season the broth beautifully!

I enjoy watching Becky from Australia and have printed off many of her recipes and it always feels like she is just talking to me when she says “hello and good bye friend” that makes it that little more friendly. I love her kitchen not sure how she could improve that space but guess we will wait and see. I am in my late 70s and wish I had a Becky to watch all those years ago. 🤣🥰🥰

Wow you are amazing! I love how you explain and describe your steps. I'm in my late 60's and expected my life to afford me the ability to have the life you have now. Hey sweet Becky! I am watching as I am making homemade yoghurt and thought I would pipe in regarding salted herbs... I am french Canadian from Québec and salted herbs are very much part of our culture... It was how garden herbs were preserved over winter. Here's my recipe: 2/3 mix of anything that grows in the garden; think carrot tops, beet tops and all herbs ready to harvest making sure there are onion tops or chives, plus one carrot (very finely chopped) mixed with 1/3 part big kosher salt. I make sure my herbs are very dry, all chopped n food processor. I mix in the big salt by hand. Store in the fridge for a week or 2 before using. It will last forever in the fridge! I use it when boiling pasta, rice and/or vegetables. I also use it in soups ( french Canadian pea soup!!) and stews measured as regular salt. So versatile! I've been making my own for a long time as store bought small jars of salted herbs are very expensive here. I love seeing home cooks make their own versions! Hugs ❤😊

So you dry your herbs and veggies first, THEN run through the processor and add to the salt? Thats how I was envisioning it being done and was very surprised when she added the salt to wet, processed herbs. I'm wondering if adding the wet herbs to the salt and then drying infuses the salt itself with the flavor rather than being a mix of flavors, one of which is salt? I can see benefits of both.

@@Lucinda_Jackson hello Lucinda! I don’t dehydrate the herbs, I simply make sure they are completely dry after washing. You can also use dehydrated herbs if fresh ones aren’t available.

Sugar snaps are the first thing I plant, I love them, they grow so high and are so prolific. So much reward for getting out in the cold to plant. we have had snow in Spokane after planting them and they come up through the snow. Shelled a bushel of peas every year on Grandmother's screened front porch in North Carolina. My favorite chore. Every summer.

I had a friend whose extended family lived on farms (our families lived in town) in Indiana. We used to love to go out to visit on weekends and help shell peas, snap beans, etc so they could can them. We always took some home (plus some other produce) to our mothers to cook for dinner!

My mother in law lives in Washington now, but when I was 19/20 she moved out there and I would visit her allllllll the time. I live in Colorado. And I have the fondest memories of just me visiting her and walking along the Oregon coast, talking for hours sitting on the beach. It was so fun. Love the coast!

I have Earth Boxes for my herbs, and my parsley and basil are going nuts! I live in Redmond, Oregon, and it’s been very warm. I keep all my plants well watered, and they love it! I don’t have a freeze dryer, so I need ideas for preserving my herbs. I love the Oregon coast! My grandmother lived in Estacada, and I grew up in Eastern Oregon, so we often went to the coast in the summer when we went to visit her. We’re now planning a September trip to Seaside. My kids are grown and gone, so it’s just the two of us now. The last few times we went to Lincoln City, so we’re changing it up a bit. I would so love to have a big garden again now that I’m retired. I have three Earth Boxes and intend to add several more next year! I got Oregon strawberries from my local produce stand and put two batches of freezer jam in the freezer. Nothing like a fresh Oregon strawberry! Marionberries are arriving, so that’s next on my preserving list! I love your videos!

I don’t know who (I call them south Texas due to their identified location) on this channel last year suggested Carribe Cilantro for growing in the heat but thanks to them! The seeds germinated in 90+F heat here in the south.

We got a deep freezer when I was a kid. Mum started making freezer jam (strawberry and peach). Loved it so much more than the cooked jam.

I want to make cilantro salt so much! I had a huge pot of it growing…..then the groundhog ate it down to the dirt! It started coming back and was doing ok but the heat killed it. I’ll be planting more the end of July or early August….I need my cilantro! Even the basil isn’t happy! Love your videos! I’d give anything to have your energy!!❤❤❤

I wrap my head lettuce in paper towel also keeps fresher longer. Learned that from Rachel Ray, her tip is clean all produce day bring from store and it’s ready for you. 😊

I just finished harvesting herbs, peppers and tomatoes. I made souvlaki chicken, pita bread and tzatziki sauce for dinner. Those fresh tomatoes and herbs took our souvlaki wraps up a whole notha level. 😋 I love this time of year!

Bonsoir Becky, je viens de vous découvrir et j'aime beaucoup ce que vous faites. Je voudrais savoir pourquoi vous mettez de la pectine dans votre confiture de fraise et surtout pourquoi la plongez vous dans l'eau !? En France nous ne stérilisation pas les confitures une fois mise dans les pots ( confiture bouillante)et mis les couvercles nous les retournons ( repose sur le couvercle cul en l'air) le processe chez nous est de mettre dans la bassine de cuisson les fruits et le sucre et de couvrir d'un tissu pendant 12 heures avant de mettre en cuisson. Pour la confiture de fraise le processe est presque identique une bassine de cuisson dans laquelle on met une passoire dans laquelle on mets les fraises et le sucre ( 1 kg de fruits pour 700 grammes de sucre et 1 jus de citron) et au bout de 12 heures le jus des fraises est mis en cuisson et quand il bout nous y mettons les fraises et la cuisson dure environ 30 minutes pour savoir si la confiture est prête, on fait le test de l'assiette. Par contre la confiture de fraise est la seule que l'on mets en pot quand elle est froide car si on la met chaude en pot quand elle refroidi toutes les fraises sont sur le dessus du pot. Je sais qu'il y a la barrière de la langue et je ne voudrais pas que vous preniez mes questions pour des reproches, mais à culture différente, connaissance différentes et je voulais comprendre les différences entre nos cultures. Je vais essayer les sels aux herbes, le seul que je fais est le sel de céleri et je ne fais pas un tant pour tant mais 1 volume de feuilles de céleri pour 1/3 de sel et en plus je fais sécher d'abord le céleri et une fois sec je le mixe avec le sel, clairement je ferai comme vous à l'avenir mixer frais puis faire sécher. What perfect timing! I just canned the Plum sauce from the Ball canning book that had on one of your videos and it is YUMMY!! Just sat down to relax a minute before I start one more canning project for today. My next canning project is the Cherry-Bourbon BBQ Sauce from the other New Ball Book (that you borrow from your mother in law). Now I’ll rest until this video is over.

You can make green chutney with your coriander!! We Indians love our green chutney’s with our sandwiches and many more dishes! Very easy to make Take your coriander, some green chillies ( don’t miss out, just add according to your preference) salt and cumin seeds or powder in a blender (food processor) and blend it! After you add a little lemon juice for that zest 😊 There is always this chutney in my fridge ❤️

My cilantro bolted so now I'm waiting to harvest coriander and maybe use the seeds to replant in the fall. I have to look at every piece of parsley I harvest because I grow a lot of mine for the Eastern Black Swallowtails (along with dill, and fennel).
