Gluten Free Alternatives: Teff- The Wonder Grain- Thomas DeLauer
What is Teff? It's one of the newest (actually oldest) gluten free alternatives! www.ThomasDeLauer.com
In this video, I will answer the simple question of, "What is Teff?" but I will also dive into why we have issues with gluten these days, and what can be done to solve the issue at hand.
-The demand for gluten-free foods in on the rise
-Gluten is known to cause inflammation in the body - yet wheat is one of the oldest known crops, so why are we having trouble digesting it now?
-Wheat has been selectively bred to increase yield and create ease of harvest and preparation, ignoring the nutritional impact (2)
-Example: durum wheat has been created by humans due to the looser husk, which makes it easier to use on a mass production scale (2)
-This change in wheat is likely one major cause as to why the common gluten in our food is so difficult to digest.
-There are benefits of diversifying our diets
-There are more than 50,000 known edible plants around the world, all with different nutritional profiles, yet we now have ⅔ of the plant food provided by three cereals - corn, wheat and rice (1).
-This dependence on very few crops leads to both crop risk due to climate change, as well as a lack of nutritionally diverse dietary options (1).
-Ancient grains, such as quinoa, millet, sorghum, teff and many others are starting to increase in popularity as both flour alternatives as well as additives to make cereals and other foods healthier (2).
Teff:
-Teff is the smallest grain in the world, originating from Ethiopia (1). If you have eaten at an Ethiopian restaurant, teff is the grain in the spongy pancake injera (3).
-Highly pest resistant and easy to grow in many different climates, this grain is a promising addition to agriculture (3)
-Gluten free.
-Different varieties vary in color, from milky white to dark brown, with different colors having different flavors (4).
-Teff is known to have a nutty flavor
-Teff is a good source of protein, especially high in the essential amino acid lysine (4).
-Also a good source of iron, calcium, essential fatty acids, fiber and phytochemicals (4).
-Great for vegetarians and vegans due to high iron content that many of us get through red meat in our diets.
-Fiber is important for glucose levels as well as reducing LDL cholesterol levels. (4)
-Diets high in whole grains have been linked to a 20 to 30 percent reduction in developing type 2 diabetes (1).
How to Add Teff to Your Diet
1. Make a gluten free flour blend to use instead of flour in recipes: whisk together 5 ¼ cup teff flour, 1 ¾ cups brown rice flour, 2 ⅓ cups ground golden flaxseeds and 1 cup sweet rice flour and store in an airtight container for up to 3 months in the fridge or 6 months in the freezer (5)
2. Use whole teff to make a breakfast porridge. Add whole nuts, berries and a small amount of maple syrup to flavor (6).
Tip: If you enjoy the nutty flavor and would like to heighten it, saute teff in a dry skillet for five minutes before heating it into a porridge (6).
There are many other recipes online, such as harder, almost polenta-like teff and other savory teff recipes!
You can find teff at some natural food stores as well as online through companies such as Bob’s Red Mill or The Teff Company (6).

We Ethiopians have been consuming Teff for thousands of years and now it is finally recognized as a super food. Good to see the rest of the world catch up. I cannot live with out my Enjera...It is not just food, it is an identity. It is also a fantastic option to make bread/wrap while on the keto diet.

@@Veronique428 lol remember, Ethiopia is the mother land where the people there know ancient secrets us westerners don't. They are the unlimited source, and will always know how to produce it with nature, while we buy it online or a grocery store. Also, westerners tend to take ancient foods and create a GMO of it and sell it to us as "natural/organic", wich has been proved to be poisonous. If you don't grow it yourself, your kinda just not worried if it's authentic or not.

No matter how much the West deems Africa inferior, it always calls them back, through the enduring spirit of #Sankofa ...Teff is as old as the Motherland. We have many other nutritious grains that the West have never laid eyes on.

Also don't forget modern methods of making bread skip the fermentation process that makes it more digestible. We used to make bread using fermentation where naturally occurring yeasts would create the rise- now we use quick acting yeast or things like baking soda to make bread fluffy so little to no fermentation is happening so it's harder to digest. Also we used to eat the entire grain but now most things made from wheat flour is made from refined white flour which has so little nutritional value other than calories that often vitamins are added back into it (enriched) but synthetically and not all the same ones that whole grain flour had and devoid of any enzymes and with less fiber. Any refined food is usually less healthy and harder to digest- causing inflammation - not just gluten.

Teff is amazing , (Arnold Voice) Lotta food from Africa is super strong 💪 due to the lack of rain and excessive beating sun. Anything that survives is warrior.

actually, teff is very low in l-lysine, which is no big deal for vegans as legumes are quite high in this amino acid. Also, yes, teff is a good source of iron - adequate intake of which is also not an issue for vegans, especially men, as most plant foods are high in iron, especially leafy greens. My daily intake is between 28 and 32 mg, while the RDI is 8. Teff is my favorite grain. Cooked in unsweetened almond or soy milk, with sliced banana, berries, flaxseeds, walnuts, cacao powder, dates - delicious!

You get this with many of the superfoods : the figures don't quite match the claims: Teff is actually pretty moderate in protein and fibre

Fonio is also another African super grain that is amazing. It’s more west African. You can make it like grits. High fiber and it is a resistant starch. I got some Teff today and will be trying it out. I no longer eat any form of wheat or white rice. It’s regulating my blood sugar level in a great way

I am going to make some type of Injera bread. I've had it before at a restaurant. I can do rice, but modern gluten is best for me to avoid. I can eat rice no problem. I do when I make rice mix red and black rice with white rice if I make rice at home.

My favorite bread is always out of stock recently so I read the ingredients and found this was the main one, I bought the flour and didn’t have the time/energy combo for baking with it yet so made a pancake for breakfast this morning and YES - this is it! I have found the flour!!!😍😍😍

Just read a Netherland company who worked with Ethiopian Farmers in the 70's closed shop, went back to Holland and submitted a Patent for it. It has been the property of this company in Europe until this week a court reversed it and stated no one owns Teff. The Ethiopian Government now is free to submit a patent for it so the poor farmers can benefit from their traditional grain. This is the same story we heard about Coffee and how starbucks tried to steal it from the Poor Ethiopian farmers. European theft is boundless.

As Ethiopian we always eat ingera like 7 days a week and it is really nice if you are vegetarian because during our fasting seasons(which is like 5 months of the year) we don't eat any kind of animal products and it works for us,it might also work for you

Just FYI -- when you go to Ethiopian restaurants, keep in mind many may use fillers such as flour or barley to mix with the Teff. The injera will be a lighter color. Full Teff injera will be darker in color, and slightly bitter. Ask for 100% Teff. Injera is also made from a fermented batter. Delicious stuff.

What you said about the restaurants is true. However, there are also some lighter colored teff grains. So it is possible to have full teff injera that is also lighter in color.

great video. I don't think it is the gluten. I think the problem is modern agriculture. Einkorn is the "ancient" form of wheat that human beings have been eating for over a thousand years. Probably a better choice of modern wheat. Also, choosing whole wheat over white flour is dramatically better for your body.

Hey I want you to answer my serious question.... I have Pectus carinatum or Pigeon Chest which means i have deformity in my left chest and its bones are shaped a bit outwards and I've been doing workout normally for the past 6 months regularly and now i notice that even though i train my chest equally, the left side is getting bigger muscle compared to the right side.. What should i do ?? Please help

Hi Thomas. I would love to eat buckwheat pancakes. On the channel called Cure at Home, “why you should eat buckwheat every day”, I was impressed with all the benefits of buckwheat and how the carbs in buckwheat are easier on our glycemic load even though it is a carb food. I wonder if we could have a little buckwheat once in a while on Keto when we need to carb up?

I think in moderation it should be okay Its not high in carbs! When eating injera in the Europe which is mainly made from white flour/Wheat I put on loads of weight but when I eat injera back home which is made from Teff only i come back losing so much weight and looking and feeling so healthy! So I’ve started keto and now I will be implementing Teff in moderation as I am trying Vegan Keto(so hard) wish me luck.

Hi, I am from Ethiopia, I am so glad you are explainig the benifit of injure and teff , I was anemic ,I start eating injure for about 1 month and my Iron level went up from 9 to 12.8, I started to make a youtube vidio how to make an Ethiopian food, I am working on how we can use tiff in a different recipe.

Its not so much the hybridization but the processing of the grain. Commercial processing of wheat strips it off all its vital constituents and involves aluminium by-products. Celiacs who have tried fresh home made bread with fresh organic wholemeal wheat flour have reported no side effects...

Aida, Teff is Keto friendly. Just keep it under 1 Enjera per day and use it to make bread and wrap...You can also have Teff Chechebsa for breakfast ....so much you can do with it.

Nope, the highest source of iron is amaranth. Besides, seeds and legumes are abundant in iron, so it's not the problem on vegan/vegetarian diets. More important are calcium, zinc, vitamin B5, vitamin B3, vitamin B2, vitamin B12.

You don't even need to mix the teff flour with any other flour. Keep it simple. Now it's more sour/bitter but most like that flavor better 😛

It is mostly protein. Teff flour does not rise like carb-rich wheat bread.

you must know the real recipy how to backed engera .the dough need to be fermented 6 days to backed real teff flour Engera .

this the way we backed Engera from teff flour . you don't even test like sour bred . 6 days dough fermented with lot of water and the 5th day that fermented water will drain all. before backed add warm water and mix together let the dough started again over night the next day ready to backed lot of proses to backed but it is health food teff flour . you can use for muffen also .

It's hard for most humans to digest to varying degrees, and some people are legitimately sensitive to it or even allergic. Also usually foods high in gluten are made from highly refined flour and often also contain lots of sugar or fat (donuts, factory made breads, cereal, pizza, pasta, cookies, etc). If you're not particularly sensitive to gluten it's not the worst thing, especially if you're consuming it in moderation in whole grain form in a healthy type of food - but that's actually pretty rare.
