Hi Sunil! I've never tasted the chutney at this place in Pune. But my recipe is for an old and traditional Goan chutney sandwich. I grew up feasting on these sandwiches whenever my Mum made them or when they were served at Goan parties.

Your explanation is very easy to follow. I am sure one can use dried red chillies with coconut to make a red chutney. Have U tried that. Maybe U could make a video on that as well.

Malabar paratha is obviously from the Malabar region of South India. But I think by veg zacoti you really meant veg xacuti. Actually xacuti dishes are traditionally non-veg dishes from Goa. But just like you have veg biryani for vegetarian customers, you'll also come across veg xacuti in Goa. The xacuti masala will be the same, but instead of chicken or mutton, you'll have vegetables. Hello Veena Thank you for the recipe. I also wanted to request for a solution to fix the bitter taste of a gravy dish caused by excess use of the coriander stems.

You're so welcome, Freda. Yes, coriander stems do add flavour, but when they're bitter, you could have aproblem. Unfortunately, Once they're incoporated into a gravy there's no way to take them out. Perhaps, the only thing you could do would be to discard some of the bitter gravy. Add a little water to the dish and some sugar/lime juice/ground coconut, any of these ingredients to it depending on what recipe you're making, or even some more of the other ingredients that went into the gravy, and try to mask the bitterness this way. Hope this helps.

Very nice recipe. I just made it and it is very tasty. My question is how long will it stay ? Next week we might go on a road trip. Will it be good till then?a week from today?

Unfortunately, this is not a recipe that can be used for long road trips. The bread would become dry and the chutney could go bad. You have to consume these sandwiches within a couple of hours if kept covered outside the fridge. You could however have them cold the next day if stored in the fridge. For a road trip, you would have to make them a day in advance, wrap and store them in the fridge overnight, and then carry them in an icebox to be consumed within the next 3 - 4 hours.

You're most welcome. You could skip the onion, Paul. Actually, caramalised onion adds a different kind of sweetness to the chutney. This is also believed to increase the shelf life of the chutney, though I can't vouch for this. The butter... well besides adding to the moistness and taste, it also prevents the bread from becoming soggy from the chutney. As a substitute though, you could use olive oil, vegetable shortening, cheese spread, or even cream cheese. Hope that helps.

I loved your recipe. Being against wasting food, would you please guide me what to do with the sides of the sandwiches that you have cut from all sides? Being spicy I do not think birds wud eat them. I also do not have a composter because I have small sized home.

Hello I made the chutney but just wondering why it is tasting bitter. Please let me know what to add to take out the bitterness Thanks

Hi John! Am really puzzled about this.None of the ingredients used in the recipe have a bitter taste. Unless one of the ingredients you used was bitter to start with, the chutney can NEVER be bitter. It has a mouth-watering mix of pungent, sweet, and sour tastes. I'm wondering if perhaps the coconut you used or the mint had already gone bad. I suggest you make it again using fresh ingredients.

What can you do with the end cuts ?

@@rolffigueiredo3786 Rolf, you could break and toast these on a tawa and add them as croutons to soup. Or toast them a little more till they get browned some more. Then when they cool to room temperature, grind them coarsely to make flavoured breadcrumbs! But a great question.

You're welcome and thanks a lot for the appreciation, Cynthia. While a few find the music too loud, lots of people aare also enjoying the musicas it's a hugely popular Konkani song. But I agree with you that the volume of the music needs toning down. When I uploaded the music, that was the lowest i could go. But now I've used a software to tone it down some more, and in future Goan recipe videos, the music will be much much softer.
