Trisha I tried out your recipe. I've watched my late mother prepare gauva cheese every Christmas, but this is the first time I prepared it myself. It turned out EXCELLENT!! Mum would have been so proud. Thank you Trisha.

Hello Tisha! We succeeded in making some guava cheese today. Thank you for sharing your recipe. We had the confidence your recipe would turn out right, even though it was for the first time we were trying it out. Therefore, we tried it with nearly double the quantity of guava pulp, doubling almost everything proportionately. We did not get that exact tint of red, it was more of a rich brown, and we seem to have taken it out a little stiffer than your's. However, the rest of it turned out fine. Thanks once again. Great to hear that Nellie. Remember to use the cold water test to check if your perad is done. I get this color because the guavas in the can are pink ones. If you'd like to get a little color when you make the perad, add a couple of drops of food color, if you like.

You left out the lemon juice and a spoonful of butter. It gives a shine to the guava cheese and the lime juice gives it a tangy flavour and acts as a preservative too. Try adding a bit of chilli power, its very yummy.

Hello Madam, my wife always watches ur recipes and prepares it at home and it's just done in one go beautifully everytime. But when she tried this one now a few hours back and she also did the cold water test and also the batter has cooled down too and when she cut it was kind of soft/ chewy. She has cut the whole batter. So can u suggest something to fix it back by reheating it again or something like that please

Hi Sraddha, I don't recommend a non stick pan because it comes away from the pan very easily, even before the sweet is cooked. If you are confident with the sweet and you don't have another option, then go ahead but I would recommend the water test, just to make sure the peraad is ready to take of the stove.

Would guava nectar also work? And also how does the taste of canned / nectar guava cheese compare to fresh guavas

Hi Sierra, Guava nectar wont work, you'll just end up with a reduced or concentrated version of it, almost like a guava syrup. You will need the actual pulp from the fruit. I was a little sceptical before I tried canned guavas too, but trust me, you wont know the difference. Personally, to me, these tasted even better than the fresh guavas.

Maria, the cloves are added just for a little flavour. It add a very subtle flavour to the guava cheese.

@@lourdesnoronha4199 i tend to make mine a little less sweet and I use a 1:1 about 500g of guava pulp to 500g of sugar. However, you can add more sugar to suit your preference. The amount of sugar will also depend on how sweet your guavas are. I really cant say how many big guavas will be needed as I havent used fresh guavas for more than 10 years now. I would start off with whatever guavas you have and adjust the sugar as needed. Hope this helps.

The base of the perad is still not set after placing it on the plate , should I wait for it to set for another two days ?

I'm not sure if it will set. It probably needed more cooking. I recommend using the cold water test in the video to tell when its ready to take the perad off the heat.

How long will it keep good outside and inside the fridge?

In the fridge, I've stored it for 6 months without any issues. Outside the fridge, it will depend on the climate, but it should easily last for 3 weeks. Just make sure you store it in a cool, dry place.

@@durggamuthu2881 If it's too soft, you can use it like jam and spread on toast or chapatis. Alternatively, if it hasn't crystalized, you can try putting it back on the heat for a little while. For future reference, I recommend doing the water test to check if it is ready to take off the stove. I hope this helps.

The cheese did get firm but while cutting it it was still very sticky and did not maintain the shape. Can it be put back on the pan

It's the usual problem Yes, put it back and continue cooking till it's really thick.

Hi Wynetta, the complete recipe link is in the description box below the video. Typically, I would use a 1:1, but this depends on the sweetness of your guavas. Since these guavas are canned in syrup, I used a little less. I got 620g of guava pulp from the halves and seeds and I used 500g of sugar. Hope this helps.

Hey, Thinking of trying ur Guava cheese this christmas as it sounds amazing. But I just wanted to know why have you used cloves in the recipe? What is the difference in the taste? Does the cloves give it any difference in taste?

Hi Violet, leaving the pan is not always the most accurate way to check for doneness. Please use the cold water test as shown in the video. I use it every single time and never have any trouble.

Cloves is not to be used in pareda it will give a funny taste I have many times it is not a new thing for me

Hi Maria, we happen to love the flavor of cloves in perada. The flavor is mild and not overpowering. This is a family recipe passed down the generations. If you don't like cloves, please feel free to leave it out. Cheers.
