Qualified data protection officer here! It is indeed illegal for them to not tell you they are filming on their bodyworn cameras. It comes under your right to be informed, a new right we all got when GDPR came in back in 2018. The rule says they must inform you, no later than the point at which data is captured, that recording is taking place, the purpose, and how you can get a copy (according to GDPR). Their code of ethics just says they must inform you. If they don’t tell you and still film, then they have not upheld your right to be informed, and you have a right to compensation under Article 82. Look it up - it’s v useful!

Ten years time -- a device was planted outside a police station attached to a squad car. A Man was loitering outside and noticed said device. Luckily he had been warned about the dangers of looking and especially noticing things by his local bobby and preteded everything was fine. 60 police officers were killed in the blast. Hospital staff said some of the officers could have been saved but luckily no one noticed.
