I like Gordon's videos for the simple fact that you can tell, even after all the years he's been cooking, he still loves to do it. That's one of the most important aspects of creating a dish that's above and beyond. Anybody can follow instructions, but to have a genuine passion for making something delicious - that's the key. As a chef, if you don't enjoy the process, your food will always fall short.

Marinating something and the time it takes to cook said food after its prepped is different. You don't want to pre prep, you can take 3 hours to make dinner. You know you're severing dinner tomorrow to guest? Fucking prep ahead of time so it takes 20 minutes.

It's not too far fetched saying over a hundred, because some of the ingredients used (generally, not necessarily this video) are not exactly staples in many countries, making them somewhat expensive, not impossible to get but relatively expensive, which is why its usually not just a walk into the "international section"...I'm from west Africa, I usually don't like specifying cuz people tend to make assumptions, still probably are going to even though I wasn't specific. To narrow it down an anglophone country. Anyone as from even a lower middle class family can speak more than decent English, and being predominantly Christian you've been given at least one foreign name lol. if you burn your chicken to get the skin roasted.. the next 45 minutes, add 2 cups of water and roast it .. cover in foil and you will have super moist chicken..

I think he said that if you feel the oil is too hot, add “cool oil”-is this correct? It seems odd to me, because wouldn’t the added oil just rapidly heat up (the temp is already high) and theoretically exacerbate the problem?

That's because they make for the most flavorful dishes. I do love some breasts as well though, and they're exceptionally harder to make juicy and flavorful like thighs/legs/wings.
