I would definitely need to reduce the amount of salt used I think my liver would go into failure with that much salt in the second dish. However these are great ideas and great looking dishes.

Honestly, I don't add any salt or pepper when cooking. I leave that up to each individual to season their food to their own taste. My own food I don't tend to add salt at all. If I wasn't feeding other people I wouldn't own salt.

I pan fry chick peas in olive oil until nearly crispy and then add in Italian dressing, heat until bubbling and then toss in some minced garlic. The heat will quickly cook the garlic so it won't be terribly strong to eat. Then spoon chick peas with dressing onto a nice bed of greens, fresh tomatoes and some cucumbers. Salt and cracked pepper and chow down. yum!

I love garbanzo beans too..I will need to make that dip.. I make a soup with chick peas. Coconut milk, yams, onion and garlic, plus curry powder , ginger, turmeric , salt and pepper and simmer till jams are done. Before I sauted the onion and garlic too..this can be eaten with crusty bread or with rice or just soup..so 👍

If you don’t have hummus for the sauce, why not just make the sauce with chickpeas, some tahini or a few quick soaked cashews, garlic, lemon juice and seasoning and quickle blend it? Should make a good sauce, from scratch, right? ☺️😋💚🌱🧩🍀✅

I am addicted to your Chickpeas and Spinach dish! I dream of making it again. Great hot or cold, the texture is amazing. For a more rounded, mellow flavor (and a boost of vitamin B-12), I mix in 1Tbs nutritional yeast. This is one of my favorite dishes ever, and so easy! Practice “mis en place” (have all your measured/diced ingredients ready to go). You won’t regret making this dish.

Hey Albert, all of these recipes are fabulous. I'm from Lebanon originally and your roasted pepper hummus reminds me of a dish from the Levant region called muhammara. I'm going to give your recipe a try but minus the olive oil since we don't use olive oil in hummus. Chick peas are great and very versatile. The Sevillano dish is very close to a popular curry where the chic peas are are a substitute for lamb and spinach. I always have tinned or jarred chick peas as a standby. The best chick peas I buy come from the cooperatives in the Axarquia in Malaga. They are dried of course and very inexpensive but when hydrated they are biggest, plumpest, chick peas you will ever see. The lentils from that region are also first class. Indeed, the quality of fruit and veg (and fresh seafood) in that that part of Spain is so good and cheap that it breaks my heart to see so many unhealthy and overweight young people in Andalucia eating processed rubbish. All four of your wonderful recipes are inexpensive and show us that it is not only a matter of money that people eat badly.

Great recipes! I would strongly encourage your viewers to SAVE the aquafaba (chickpea bean juice from the can)! It is an important ingredient in vegan baked goods and desserts. It can also serve as a vegan "egg" in many different recipes.

I have a serious weakness for chickpeas, so thanks for that. I only use canned these days, can't remember when I last cooked them. I suspect most of the ones you used here were freshly cooked. Is there much difference? Here in England you can buy three or four cans for a pound ( euro ), but dried are hard to find and a silly price! Then you have to soak and boil them for hours! Sometimes canned chickpeas are a bit mushy, only good for hummus, so when I find firm ones I store up a few cans. I'm liking your style, with a bit of thought you could be Spain's Chef John ( Jefe Juan 😀). Subscribed.

I've not checked yet, but not sure if they sell Sweet, Smoked, Spanish, Paprika. Would there be a good place to get it online? THE HUMMUS can be further made CREAMY by pinching off the skins to each chickpea straight out of the can/jar... while 'wet'. The chunkiness of your hummus is due to the SKINS left on the chickpeas and processing them into a hummus. This one step - can be done using two bowls; shake the peas till the skins are off...... makes ALL THE DIFFERENCE...even to the taste.

I just needed to come back and comment again on this post. I’ve made all of these recipes and I come back to them quite often. My fav is the chickpeas with garlic parsley and it’s my go to quick, easy, and absolutely delicious meal. These never disappoint. Why am I commenting now? Not sure about recipe two. Went to pantry now where are my chickpeas, hmmm no will use northern beans. So now get out my spices and my tomato sauce. Time to put together can't find my tomato sauce anywhere, hours later cleaned my kitchen still nowhere to be found. So ok spaghetti sauce must be kinda the same. No fresh spinach so will use frozen Not sure about this recipe seems more Italian? Can't imagine why?? 🤨 Will try again later with the listed ingredients.🙂

Spinach and chickpeas here are expensive. 😂They don't grow here that's why it's being imported. So this is only applicable in countries where spinach and chickpeas are always available😁

So I googled “tajini” and that “sesame seed butter” I promise you in my life it’s the first time I hear about this; and the video said you could substitute peanut or “om “ butter s I’ve never heard of “OM butter”

I can my own chickpeas because if you buy them in bulk; this dish is almost free and the taste and texture of my own canned peas are divine!

Thank you for these great, AND EASY, ways to use can chickpeas. I’m about to can 38 lbs of dry peas into quart jars. That’s going to be a LOT of chickpeas to use up!
