So happy I found this channel. It's like being in culinary school again but with a very patient and caring instructor. I can't even understand Japanese. Also, his white shirt is spotless, he's just exuding finesse.
It looks like a fantastic dish. I don't think I can make it by myself, but if I ever have a chance, I'd like to have it in YOUR restaurant. Only possible in Japan or/and also available in US of A? Just curious, what is that cap (chef chappo) you are wearing supposed to mean? I always enjoy your video and breaking down of your cooking. Your Japanese talking is very pleasant to hear.

Thank you for your comment. I wear a turban, and wearing it while cooking makes me feel calm.
