Hi there! A note about buttermilk or regular milk… as I’m retired, I don’t have much need to have these hanging out in my fridge all the time, just spoiling before they’re used up. Soooo, I’ve bought powdered milk and powdered buttermilk, just for the purpose of baking and cooking! No waste at all! I don’t feel guilty because I’ve thrown away food and the recipes are just as delicious!

Dear Becky: I just wanted to share some thing with you. You, your Granny and husband have been part of my life for a few years now and I have come to see you as one of my sister-lee's or a cousin or some thing close to it and I can not tell you how much you have impacted my life not just my cooking! Last Dec I got covid and well I was sure the Lord was going to take me home and I was good with that but he had other plans and after three month went back to work just a little older and enlightened to the hand of God and how it moves. I did not keep up on your chanel; I was going through some stuff at the time but noticed there was something off in my feed and I had missed some episodes so I logged on last night to start catching up, after all I have my grand kids on the weekend now some times and want them to learn to cook with what what thy have cus times r coming and I tell them that all the time. but I was so shocked to here about your husband, and had to stop the feed and just pray for you and your family, I did not know him but I will some day and I know he was a wonderful person God had his hand on. I will keep praying for you and your until the lord takes me, and all these prayers that all of us have been saying for you and yours, well thy are in the fathers lap and can never removed, he will keep those prayers for you until the day he is holding you. you are loved. He is closer then breathing and nearer then hands and feet.... Ms. Pat

Your choice of that Psalm is very meaningful to me. At one point I was close to death…though I did not know how close. The doctors put me in intensive care! While I was waiting for the ambulance I wondered if I was dying…is that floating feeling was what death felt like. I asked Jesus to take my soul. He answered me. He told me I was not dying…not yet…but when you DO die that is what dying feels like…so don’t be worried. I told Him I worry all the time about everything. He said “Then stay close to Me.” That was 5 years ago…and here I am!!!

Butter is probably my favorite ingredient. There is no REAL substitute for it, but i find in baking that refined or virgin coconut oil works in almost every recipe just fine. Virgin coconut oil will add a coconut flavor which is nice is some recipes, and the refined is completely benign. You can buy organic by the gallon bucket for cheaper than i spend on butter.

When I was little my mother made a coffee cake from a recipe on the side of the Kellogg Special K box. Mom wasn't much for baking but I loved this coffee cake. It is a shame Businesses did not archive and maintain their History better. When I was growing up those Recipes on boxes and cans were how my generation learned to cook new dishes - especially desserts. When those recipes got juggled around and lost during moves or divorces or flood or fire or tornado or hurricane or earthquake disasters, many have been lost and are irreplaceable. 😩
