GRAPHIC!!! - How to fillet a fish - Mackerel - Chef Dai demonstrates how to fillet a Mackerel using traditional Japanese techniques.

A firm-fleshed, oil-rich fish with a torpedo-like shape and iridescent silver and blue striped skin. Mackerel is a delicious nutritious fix, with intense creamy meat packed with omega-3 fatty acids.
Mackerel is an extremely popular fish in Japan and is commonly grilled with salt, stewed with miso or pickled and eaten sashimi style.

I was raised on Hessle Road in Hull, England. Hull was a major fishing port for years until the cod wars in the 1970s. Our fish filleters would’ve done that in less than half the time with perfect fillets first time, no need to go back and trim them.

Mackerel is great cooked on the grill. The oily flesh gives off a great smoky flavor. I don't even bother filleting the fish. Cook it whole, turning it once and the flesh comes right off the bone when you're eating it.

I really like the handle on these knives as they feel good in my hand. I'm giving them 4 stars on look and feel, but have not had the chance to put them to the test yet. I mostly fish for catfish and can hopefully try them out in the next few days. If they hold an edge throughout a limit of catfish, they'll be worth another star.Update...I used the 9" strong and the 9" fillet on a mess of catfish. I did put a sharpening on these before I started. I want a razor edge to fillet fish but they weren't quite that sharp. The people who gave these knives crappy reviews and said they were sending them back was because they weren't razor sharp. So what, do they not have a knife sharpener?? Good grief! I mean you have to sharpen any knife from time to time.I personally like them and am pleased with them. If you're too lazy to sharpen a knife then hire someone to clean your fish lol.I've never bought a knife in my life that would shave hair right out of the box. Don't be afraid to purchase the knives. They're pretty nice in my opinion.

Having worked as a fishing guide for the past 7 years I've filleted my fair share of fish. Your technique is very different from how we do it here as you are filleting one fish so can take your time a bit more and use a different technique. For me I need to fillet lots of fish as fast as possible so I typically don't bother gutting the fish beforehand and just leave the belly, entrails, and head attached together for disposal later. Just cut through the rib cage and remove it after. Nice video though very clear in showing how you fillet your fish

Wrong knife, it's a cooks chopping knife, the reason filleting knives are used for filleting is because they are thin and flexible. The user can feel the blade glide over bones, leaving the flesh on the fillet. Also, the whole point of a fillet of fish is that it's supposed to be boneless. Hearing that thick blade crunching through the bone just isn't right. Mackerel are particularly easy to fillet due to the strong skeletal and muscular frame. Could I do any better? Yes, and twice as fast, using he correct knife for the job of course. I feel a little annoyed and even embarrassed that someone who projects themselves as skilled or professional, demonstrates their ' skill' in such away that, the unskilled thinks they are really good. Best part of his demonstration, the fish, a beautiful example, so yummy.

Thanks for this video! I got used to eating yakisaba in Japan for a couple of years, but never learned how to cook it (why bother when it's so cheap and available everywhere?). When I came back the US, it was surprisingly difficult just to FIND a mackerel, nevermind a cooked one. Enter me learning how to cook this bad boy by myself! I've never cleaned nor gutted a fish in my life, so your videos are appreciated!

Also has anyone noticed how high quality that knife is? Its a thick tamahagane carbon steel santoku knife, the thickness of the trailing edge is much greater than the leading edge and the trailing edge is also rounded to prevent blistering your hand with continuous usage, its a magnificent knife.

Hmm ok! I never though that gutting and filleting fish was graphic and they are usually dead when i do it! I normally gut them and take their heads off at sea as it saves all the mess in the kitchen when cleaned in sea water not to mentioned the smell in the bins from rotting fish guts :) I then fillet them and marinate them and share them with my husband and Cat :) I am into conservation so only take as much as i need to eat :) ours seas are crystal clear and full of fish. I normally take my kayak out for fishing :)

I for one appreciated your video. I'll watch others as well and see what different techniques look like. I don't really see the point of people dumping on you if they do it differently. They should make their own video. Thanks for putting it out there.

I used a chef's knife and it was quite fiddly especially when the knife reached the spinal bones. As an amateur I didn't know how much force to apply. However... from 3 filleted mackerels, I managed to scrape every bit of meat from the left-overs and made a decent sized burger patty. After frying for 2min on each side, it was more delicious than the skin on pan-fried the fillets. Next time I will turn all my mackerels into burger patties. Maybe upgrade my patty recipe with herbs.

I'm from the US and we call that a "Boston Mackerel" Here that are generally used as bait whole for sharks, or cut into 3" pieces for bluefish. also fileted and cut into thin strips for flounder/fluke bait. It is a good sized fish though. That species only gets about 18" in length usually...

In Norway mackerel in tomato sauce is one of the most popular things to have with bread. Also most people from the north of Norway don't eat mackerel, saying it is a fish that only feeds on dead things. Funny how different cusines are!

Jesse James Vogel the big king Mack's are good for the grill though I wouldn't use one of them for any kind of bait honestly bonito I'd use for shark bait really bloody and bluefish I'd just bottom rig squid fluke jigging with kili or gulp swimming mullets
