The reason why the lobster was twitching was because sea salt contains high amounts of sodium ions, those same ions help send nerve impulses through nervous tissue. The lobster was dead as soon as the knife went through its main body. The salt was just providing the chemo-electrical current allowing it to twitch after death.

Thanks for the quick response. Oh on a side note I was digging up an earlier video when you were making the steamed octopus and was asked if there were places that serve it raw here in the states. Just wanted to point out theres a korean seafood restaraunt named sik gaek in Queens NY that I go to as a birthday tradition that sell octopus raw. Quite an experience if you guys ever travel up to the NY area. Everythings raw and freshly prepared in front of you definitely should check them out. Just seeing how the lobster was prepped reminded me how they prep meals at this place.

Anyone willing to read this, let me explain - with _scientific evidence_ as well: Lobsters do feel pain. I am NOT vegan, in fact, I quite like and very much enjoy meat - not specifically lobster, but it's interesting to see it made. Back to my original point, Lobsters do feel pain. However, they react more so to sudden stimulus, but their brains aren't so complex that they process it in the same way a human or other animal would. So, an example would be, a human is stabbed in the leg, they'd likely think,"Wowie, boy does that hurt like hell." And possibly cry. A lobster, however, would more likely 'think',"Welp, that limbs gone, I should go before that happens again." A bad explanation, but it'll work, it's sort of as if they *sense* pain, we aren't quite sure yet completely, if they do totally comprehend it. On the other hand, however, the other choice to doing this is boiling them alive. *ALIVE.* That means, if they do feel pain, they are in a pot of 212°F water, with no way out. What Chef Hiro did here was totally, absolutely PAINLESS. The reason I say this is simple: He went in to the brain, and thus the moment that knife went down, all possible thought and - ability to comprehend pain - was gone. Any movement was involuntary, and simply spasms that occur naturally. This lobster died without a feeling of pain. We don't know if he was thinking,"Oh boy there's a knife at my head, bye Karen," or,"Whats even happening," And there's no scientific evidence to prove it, but we do know that even if a lobster can feel pain, it DIDN'T feel ANY in the way Mr. Terada killed it. ^-^

Karm A We are slowly making steps to eat less red meat overall and then will start eating many meat alternatives-lots of benefits to becoming vegan but not sure if we could completely transition over ever. I knew that the fish the "food of the poor" , mainly because way back it was easy to catch and preserve, just put it in a barrel with a lot of salt and it not go bad or rot as easy as other meat types. Didn't heard anything about crabs or lobsters.
