If you do not have green papayas where you live, then you can make this Kimchi by using local food of your area. You could use carrots, pumpkin or raddish!

So this is a kimchi to be comsumed quickly, right? I understand 1 day after the final process and then it goes into the fridge, how long it can be stored in the fridge?
