In Suriname we call it dosi, we shape it as a rectangular patty and it's mostly made by the people of District Para where the airport is located. I always say we have more in common than divides us in that region. I'll try this variant, thanks for sharing!

Looks amazing.... when growing up in the countryside (Berbice) .... there always was a local lady who specialized in these treats - bless them. I will attempt one of of these days - thanks for making it possible

I also grew up in Berbice. Every Friday, a lady would be walking around in our village, carrying a basket of quenches on her head to sell it to her customers, who impatiently waited while salivating. 🤗

I’ve never heard of these before but they look so good, Matthew! I’m going to make a batch sometime soon, love the coconut filling. Should I spray my cookie cutter with some oil before I make these?

Enjoy. Let me know how it comes out. No you don't have to spray the cutter. It should pop out just fine. If you want the added precaution you can though.

Maybe you overcooked it. It doesnt have to get super brown. Also make sure the heat isnt too low or too high
