Saltfish and bake is a really popular breakfast item in Guyana and in other places around the Caribbean. I have great memories of my grandmother making saltfish and bake in the mornings, and she still makes it for my family and I today. I hope you all give it a try and enjoy my twist on this delicious dish!
Ingredients and Measurements:
1 lb. saltfish (salted cod)
2 cups thinly sliced cabbage
2 carrots grated
1 onion sliced
5 cloves chopped garlic
3 wiri wiri peppers (use as much or as little hot pepper as you would like)
3 scallions sliced
salt (optional)
black pepper to taste
1/2 tbsp. tomato paste (optional)
oil
water
